Baked Haddock

My whole family liked this dish. I used tilapia and cooked for 20 minutes but the fish was moist on the inside and crunchy on the outside. I followed the advice of prior reviewers and baked on a raised rack so both sides browned.

Pepperoni Bread

This was delicious. I used Pillsbury pizza crust (classic, not thin) and cooked for 25 minutes at 375 degrees and it came out perfect. 40 minutes would have been way too long. Other reviews mention increasing the cheese and/or pepperoni but I think it's great the way it is. You can actually pick it up and eat it with your fingers. If there were any more filling it would be messier and would require a fork.

Grilled Marinated Shrimp

These shrimp as so good!! My entire family including picky young kids can't get enough. I've made it several times and each time we're just blown away by how good it tastes. I replaced the hot sauce and tomato paste with 2 TB of ketchup as others suggested. A definite keeper!

Broccoli Risotto with Cream and Lemon

This was a really tasty risotto. I skipped the cream to limit the amount of fat but it was still very creamy and delicious. This could be modified to add whatever veggies are on hand - mushroom, asparagus, etc. I will definitely be making this again.

Chicken Tikka Masala

This is excellent, tastes just like at our local restaurant. I made the following changes: for the marinade I used 5 tsp of garam masala in place of the cumin/cinnamon/cayenne (it's a mixture of these spices and others.) I only used 1 tsp of pepper and 1 tsp of salt plus added two crushed garlic cloves. I marinated all day. For the sauce I added one chopped onion and my spice mixture was 1 tsp cumin, 1 tsp paprika, 2 tsp garam masala, no salt. I excluded the jalapeno but added a dash of cayenne. Wonderful! The second time I made it I doubled the sauce to have lots of extra to top our basmati rice.

Tortilla Soup II

Wow, this was really good. I made the following modifications: I used only 2 chicken breasts and then added one can each of black beans and corn. I also doubled the amount of broth. I excluded the cayenne pepper and I'm glad I did because it had the perfect amount of heat for our tastes. It would have been much too hot for us with the cayenne. I used blue corn chips rather than cooking my own tortillas and added extra chopped cilantro as a garnish. Delish!

Broccoli Rice Casserole

This wasn't my favorite dish. The taste was ok, but the rice was dried out. The directions didn't state whether or not to cover the dish so I didn't. I think it might have been better to cook covered w/foil to prevent it from drying out.

Hot Chipped Beef Dip

Chicken Marsala

I served this for company the other night and it was a big hit. I don't usually finish an entire chicken breast but at some point I looked down and realized my plate was clean! Even my picky 20-month-old liked it. Based on previous recommendations, I halved the butter and doubled the wine. I also added a little bit of cream (maybe 1/4 cup?) and flour at the end to thicken the sauce up a little bit so it would cling to pasta. This was excellent and so easy to make. I'll definitely make this one again.

Grandma's Green Bean Casserole

Wow, this was a hit at Thanksgiving! I made the following alterations: rather than canned beans I used 1.25 pounds of fresh green beans, cut into thirds and steamed. I also mixed in half of the cheddar with the beans/sour cream mixture and used fried onions instead of the crackers. It was absolutely delicious and very easy. I made it ahead of time and just popped it in the oven 40 mins before dinner (extra time since it was chilled.) Yummy!
