Quick Quiche

I really appreciated finding this recipe. I cannot handle salt so I left it out (the bacon and cheese have enough salt so it was not missed). I added sauteed spinach and mushrooms, and replaced the butter with olive oil. My cooking time was about 12 minutes longer which may have been due to using 1% milk rather than whole milk, as well as the added veggies, but that's a minor thing. Thanks for the great solution to avoiding a crust!

Beer Butt Rosemary Chicken

Beer can chicken does sound more appetizing! LOL! I do this on indirect heat on the BBQ and rotate the chicken every 15 minutes, during a one hour period and the last 10 minutes or so, over the direct heat before checking the temp. Normally no more than 1 hr 15 minutes--it's always delicious. You can also use wine or orange juice in the can or a combo of both.

Green Beans with Cherry Tomatoes

Excellent and enjoyed by us and our company. We did reduce the sugar to 1/2 the amount as we don't like things too sweet, and to keep the calorie count low. Thanks for posting this recipe!

Best Easy Chicken Croquettes

In Holland where I was born, Croquettes were a common thing to enjoy. Adding soup, or gravy to the mix adds a lot of flavour--we also add all sorts of chopped veggies from onions to carrots and red bell peppers, which we pre-cook a bit before adding them. You can make them using any type of left over meat even ham, roast pork etc. and make veggie versions too! We also deep fry them and double bread them using a egg/milk mixture. Great stuff!

Best Ever Jalapeno Poppers

I really enjoyed them--thanks! I did add some onion powder, paprika powder and some dried cilantro and triple coated them with bread crumbs and blanched them for 3 minutes before preparing, but they were just the right amount of spice for me--if stuff is too hot, you can't taste anything! I also used light cream cheese to keep the calories down! Only thing I would add is some pre-cooked spinach, but it's matter of taste as always! :-)
