Spanish Rice Bake

This dish is so good! I subsituted the chilie sauce with enchilada sauce because it's what i had on hand. It was nice and spicey. I made this to go with our taco dinner and ended up eating just the rice, served with a little sour cream. Made good leftovers too.

Lime Chicken Soft Tacos

These tacos really are as good as everyone says. I'm so glad I tried them out. I didn't have any red wine vinager, so I just went again and used straight red wine. I used chicken tenders instead of regular chicken breasts and my son and husband just loved them.

Buttermilk Pancakes II

I am a huge pancake lover and I'm thrilled with this recipie! They're better than most restaraunt pancakes and much tastier than the recipie in my Better Homes and Gardens cookbook. They were easy to mix up and even reheated well the next day. This is making a home in my recipie box.

Chocolate Chip Thumbprints

This one really ins't so great. I picked this recipie because I wanted to make cookies with my four-year-old and I wanted him to be able to help (by rolling the dough into balls and sticking his thumb in each one). As soon as I mixed the dough I realized there was definatly not enough flour, so I added about another 1/3 cup. It was still too sticky and awkward for him to roll. This isn't necessarily bad, but it's annoying when you follow a recipie exactly and it doesn't come out right. The cookie part itself is nothing special. It tastes ok, but not much flavor. The chocolate for the filling is very good. I would rather use it for another cookie though.

Salisbury Steak

This was good as far as salisbury steak goes. I would suggest using a very lean beef. Without thinking I used a pretty cheap ground beef, and it ended up being pretty greasy (since there's no way to drain it before the meat is fully cooked, only right after the patties are browned). But even so it was still good and my husband asked me to make it again. I like recipies that don't require removing all the pans from my oven and heating up the entire kitchen :) Also, next time I'll probably look for a low-sodium soup.

Brown Sugar Chops

I have a very hard time cooking pork chops, but these turned out so good! I accidently forgot the soy sauce, but they were still excellent. My husband told me not to put the soy sauce on next time either, because he loved these just the way they were. I'm printing this out and putting it in my recipe box.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are the best cookies I have ever made! 15 minutes was the perfect baking time... they seemed too soft at first, but after they were competely cooled (the next day) they were exactly right. If I baked them any longer they seemed perfect, but then were too crunchy the next day. Let them cool ON THE COOKIE sheet at least 15 minutes.

Cola Pot Roast I

This pot roast is easy to make and tastes absolutely fantastic. My husband just won't stop raving about it. You can substitute a lot of the ingredients to use what you have on hand. For example, I've been using a combination of orgegeno, basil and parsley instead of the spaghetti sauce mix, and a can each of tomato sauce and paste instead of the actual tomatoes. I use Pepsi for the cola because we're big Pepsi drinkers and the family just LOVES it. Thank you for posting this!

California Salad Bowl

This salad is delicious! I made it exactly as the recipe states, no changes, and it turned out perfect. I made this salad to go along with tacos and loved it so much I skipped the taco's and kept refilling my plate with the salad :) I'm so glad I found this recipe-- I will make it over and over.

Italian Grilled Cheese Sandwiches

This is a great sandwich! I used mozzarella SLICES and after I took it out of the broiler cut it into eight pieces (cut in half, then each half cut into four pieces) and served them with pizza slices... honestly it was almost just like restaurant mozzarella sticks. The bread was very similar to the breading that coats the restaurant sticks. Had these with a big green salad for lunch. If you have a customizable broiler you might want to set it for about 350 or lower. I left mine on the default setting of 500 (yikes!) and burnt the first two to a crisp in about 45 seconds. The next ones turned out perfect :)

BLT Wraps

Very light and tasty. I served these with cut veggies and ranch dressing on the side to dip everything into. It was really quick to throw together and I would imagine with fat free/low-fat cheese and turkey bacon it could make a really healthy meal. I'll make these alot. Thanks for the recipe!

These are pretty good, esp. if you're looking for a healthier alternative to other bar cookies. I made these to have on hand when I got that urge to snack... very tastey! It's very much like a bowl of oatmeal :)

Applesauce Bars

WE LOVE THESE BARS! I would've never thought that such a simple recipe would taste so good, even my husband has been won over. For two days everytime I asked my four-year-old what he wanted for a snack he would shout, "Applesause Bars!!" The ONLY thing I might change next time is the amt. of vanilla in the frosting... it was almost a little too overwhelming. Other than that they were perfect for us. Thank you, Debbi!

Lana's Sweet and Sour Meatballs

Mmm, mmm, mmm! I made these as an appetizer/side dish for my daughters birthday party, which had a hawaiian theme. My guests LOVED 'em! I doubled the recipie, using 4 lbs. of frozen meatballs I picked up at a restaraunt supply store. It gave me two decent-sized trays to put out. I omitted the carrot, but left everything else the same. I made the sauce, then put in the green pepper, pineapple and meatballs and simmered it for about an hour waiting for people to arrive. I skewered about 1/2 of them on toothpicks with a piece of pineapple or pepper. Hope that helps any other party planners out there :)

Carne Asada Marinade
