Taco Lasagna

Reviewed: Dec. 14, 2005
Good recipie, easy to prepare but not as spicy as we would have liked. I substituted diced tomatoes for the tomato sauce and will do so again. Next time I'd follow others' advice and substitute taco sauce for the water, add a small can of green chilies, and a small, finely chopped onion. I may also use refried beans over each layer of noodles before layering the other ingredients. Following others' advice, I baked the lasagne in a 350 deg oven for 40 min, covered in aluminum foil to prevent it from drying out.

Coquilles St. Jacques

Reviewed: Sep. 16, 2005
WOW!!! This was amazing -- my husband and I could hardly believe we were eating it at home, much less that I had made it!! I didn't have the mayonnaise that was called for so I used half M*racle Whip and half ricotta cheese instead. I also substituted white cooking wine (couldn't open a whole bottle for a quarter cup) and dried parsley and it was still amazing -- very rich and very cheesey!

Lower Fat Banana Bread I

Reviewed: Sep. 16, 2005
Great recipie! I substituted 1/3c S*lenda and 1/3c brn sugar, 1/8c water and 1/8c skim milk, wheat flour, and used 3 bananas, 1/4t nutmeg, 1/2t cinnamon, and 1t vanilla (as per other suggestions)as well as 2 "handfulls" of semi-sweet chocolate chips. The ONLY indication that this was a lower fat version was that the bread was slightly less moist than others I've made. I'll certainly be making this again!

Awesome Slow Cooker Pot Roast

Reviewed: Feb. 6, 2004
I always have trouble with pot roast -- it just never seems to come out well. That said, this one came out perfect! I had to cook it on high due to time constraints, so it wasn't as tender as I would have liked. However, when I reheated the leftovers a few days later it was perfect! Next time, I'll plan ahead and cook it on low heat.

Broccoli and Ramen Noodle Salad

Reviewed: Feb. 6, 2004
Very good and easy to make. I definately recommend waiting until just before serving to add the dressing mixture and noodles so they stay crunchy. Makes good leftovers, too.

Chocolate Lover's Cheesecake

Reviewed: Feb. 6, 2004
I have never seen my husband go back for seconds of ANY dessert (except cheese) until I made this! I adjusted the recipe and used Resse's brand peanut butter and chocolate chips and also substituted Splenda for half the sugar. For simplicity, I used pre-made crusts as well. Finally I topped it off with melted chocolate over the top to dress it up a little. I actually had people say it looked like a store-bought cheesecake!

Chicken With Mushrooms

My husband is not a huge chicken fan, but even he loved this recipe (and I loved how simple it was)! I'll definately be making this again in the future!

Sensational Irish Cream Cheesecake

Reviewed: Feb. 16, 2003
Very nice, smooth cheesecake. A friend who can taste (and hates) alcohol in ANYTHING, liked this recipe very much (as did everyone else who tried it)!
