Potato Chips

It's actually quite amazing how good these are. I even shared the recipe with my mother who didn't believe me that you could make potato chips in the microwave. Now neither of us buy potato chips anymore. I did make slight modifications. My potatoes insisted on sticking to my plate, so I started using parchment paper. I found I could also fit more slices on parchment than a plate. I also stopped coating in a plastic bag. I now place the potatoes on the parchment, drizzle some oil and then use a brush to make sure all pieces are coated.

Rich Chocolate Frosting

So amazing and simple. The first time I made it, I quartered the recipe and used almond extract instead of vanilla. Quartering the recipe made enough for 24 cupcakes. Second time I made it, I halved the recipe, used vanilla extract and added a pinch of salt. Halving the recipe made more than enough to ice a 9" cake. Worst part is adding the sugar and cocoa to the butter. Even on the lowest setting of the mixer, a lot of dust made it in to the air.

Best Brownies

i followed this recipe as written the first two times i made these, then i doubled the brownie part and used the same size pan every time since. i prefer the double recipe. i mix everything by hand using a whisk and they always come out perfect. i have to add a tblspn of milk to the icing, i'm never able to get it to the right consistency unless i do. i'm normally not much of a brownie person, but these are much moister and chewier than a regular brownie.

Soft Oatmeal Cookies

i wasn't completely in love with these the first time i made them. the more i made them the more they grew on me. my husband loved them right off the bat. they are really moist and chewy. i tried making them plain, with raisins, and with chocolate chips - favorite by far was with raisins.

Strawberry Pie II

amazingly good. i had never made or even eaten strawberry pie prior to making this one. mine didn't come out very pretty, but the taste more than made up for it. i followed the recipe exactly.

Good Old Fashioned Pancakes

these were amazing. i completely forgot to add the sugar, not out of necessity, just overlooked it, and didn't even notice. they were easy to make, i had all the ingredients in my house, and they tasted wonderful. thank you for the great recipe!

Fresh Pear Cake

since everyone else seemed to replace the four egg whites with two whole eggs, i did the same thing. i also toasted my pecans, made muffins instead of a bundt, and added a streusel topping. these were pretty amazing.

i love this recipe. i make this all the time. i will omit the water if the apples have a lot of juice in them or will use apple cider concentrate in place of water when i have it on hand.

Soft Chocolate Chip Cookies II

i changed the recipe from shortening/butter to all butter based on other reviews. the cookies did come out soft and stay soft. however, they have a really odd after taste and came out of the oven wafer thin. i did take them out of the oven early enough when they were still puffed, but as they sat on the counter cooling they fell.

Chocolate Trifle

words cannot describe this dessert. i was shocked how absolutely perfect it was. i'm not a fan of whipped topping, so i replaced the chocolate/whipped topping layer with a counterfeit chocolate mousse (pint heavy whipping cream, 1/2 cup sugar, 1 box instant chocolate pudding) and used vanilla whipped topping for the whipped topping layer instead of plain. i added a layer of caramel sauce between the brownie and mousse, but i'm not sure that added to it. this dessert is easy, delicious, and so worth the time.

Classic Peanut Butter Cookies

wonderful! i doubled the recipe after realizing the caramel wouldn't cover all the popcorn. i should have read the reviews first! i did add peanuts, but i'm not sure if it added anything since the popcorn was incredible.

Flourless Chocolate Cake I

absolutely amazing. if you 'like' chocolate, but don't 'LOOOOOVE' chocolate, it may be a little too intense. i did make two minor changes per several people's advice. instead of 18 oz of bittersweet chocolate, i used 4 oz of bittersweet and 14 oz of semi-sweet. and instead of using 6 whole eggs, i used 3 eggs and 3 egg whites.
