Apple Nut Bread

Great Recipe--always tender and moist with a lovely top. I do use more apple and buttermilk and less sugar than prescribed. Bake 45 minutes. Its also delicious with toasted sesame and poppy seeds as the nuts --minus the cinnamon, add lemon. THANKS.

Alysia's Basic Meat Lasagna

Very good recipe. I would suggest adding salt to the ricotta mixture as without it, I find that layer to be a bit bland. I add fresh basil and nutmeg as well; but that is just personal taste. I make lasagna only a few times per year and this is the recipe I always go to to keep me on track.

Blueberry Corn Muffins

I found this recipe to be just right on the sugar content -- not too sweet. The texture was great and they were moist. Instead of blueberries I used feijoas, as I had some about to go off. I did find the quantity to be a bit short for 12 muffins. I only managed 10 and they were smaller than I would have liked. Muffins were cooked in 14 minutes. Smaller is better for the waistline I suppose.

Olive Chicken II

This is an easy, tasty, versatile recipe made with simple ingredients. It is great as is but I do usually substitute boneless thighs and canned tomatoes. The only real change I make is adding in a bit of butter just at the finish which thickens the sauce and makes it stick better to pasta. Also, if you are a veggie gardener like me, this is a great recipe for using up some of your zucchini. Just put slices in a few minutes before serving.

Serbian Ground Beef, Veggie, and Potato Bake

This is a great recipe. It is easy and versatile and uses ingredients that are generally on hand. It also doesn't dirty every dish in the cupboard. The flavour combination is superb and intense. Just the small bit of cream adds a perfect richness. This one definately goes into my dinner rotation. Thanks.
