Ratatouille

My entire family loved this recipe. No one even mentioned there was no meat. I only made two changes. I omitted the Parmesan because I did not have any, although it sounds delicious. I also made this in a large cast iron skillet and did not cover it while baking. All the veggies were well done and still moist, without any water left at the bottom. This recipe will definitely be made again!

Gnocchi with Sage-Butter Sauce

I tried this skeptically, as I have yet to find a homemade gnocchi sauce I love. I thought I burned the sauce, I thought it tasted too bland. I fretted that my gnocchi may have been too cheap and would ruin the dish. Then, I put it all together and tasted...pure heaven. I attribute the success to quality sage, properly cooked gnocchi, and a simple but effective sauce I never would have thought of on my own.

Hot Cranberry Tea

An instant Christmas tradition. It even impressed the mother-in-law. I always make sure I use whole spices, actual lemons, and the whole shebang. The presentation and aroma of a punch bowl of Cranberry Tea is irresistible. (As a side note, I've also had success brewing it in the slow cooker.)

Best Lemonade Ever

I have always been on the lookout for the crowd pleasing ratio for lemon juice and this is IT! Just realize this does not make an even measurement, its a little over half a gallon.

Ten Minute Enchilada Sauce

This recipe is very simple and easy to prepare. I've never been disappointed with the sauce. Just keep in mind that 1/4 cup chili powder = 4 tbs. Just adjust according to your spice and preference.

Fluffy Pancakes

A great, simple pancake recipe. Its the Sunday afternoon staple in my house. My favorite part about these are their amazing ability flip so easily. I have used some very sorry looking fry pans with exactly this recipe, and they STILL have never failed me.

Slow Cooker Sausage with Sauce

Sure, this recipe is simple. That's what makes it good. I have made it several times and used turkey sausage with cheap spaghetti sauce. I suspect the turkey sausage is why I had no oil problem. I have tried frozen and fresh bell peppers/onions. The surprise is that its all good, the slow cooker does the magic on the lovely sauce. In a word, delicious.

Best Spanish Rice

Easiest, cheapest, and best Spanish rice recipe I have tried. I have found its taste will greatly vary depending on the salsa that you use. I have used regular salsa but have also enjoyed canned tomatoes and chilis. This is my go to crowd pleaser to accompany enchiladas.

Red Beans and Rice with SPAM®

This is the perfect fill-you-up meal for a very tight budget. We always use black beans due to personal preference. I have also tried both dried and canned beans. I almost always add an onion (instead of flakes), for the extra flavor. My only reservation on this recipe is the amount of servings. This serves way more than six, unless you plan on eating half a can of beans each.
