Buffalo Chicken Wings I

Rather than mess with digging out the bone in the wings, I cut up good sized chunks of boneless breast. I blanched the chunks in flour and deep fried them before tossing them in the sauce. I'm a life long vegetarian so I have no idea how they tasted. My husband raved about them and has insisted on having them repeatedly since then. These were incredibly simple and fast considering how much he enjoys them. Good stuff!

Double Layer Pumpkin Cheesecake

This was a nice suprise. The pumkin layer cuts the richness of the cheesecake nicely. It's a good compromise for those who don't care for traditional pumpkin pie. (that would be me!)

Chocolate Peanut Butter Cup Cookies

Rich and Simple French Onion Soup

I'm vegetarian so didn't eat this myself but I did prepare it. It was so easy to prepare that I was able to make my own seperate food at the same time. It was a huge hit and has been request frequently.

Orange Cream Fruit Salad

I have a family member that can't have any food with artificial orange flavoring. This was such a huge success because he loves orange fruit desserts but hadn't been able to eat one in years! I substituted 3/4 cup cool whip for the sour cream. The result was a bit runny for my taste so I added an extra banana and an extra 1/2 apple. I also added a couple of handfuls of cherry flavored dried cranberries. Once it thickened there was plenty of the filler to cover all the fruit but the fruit didn't seem like it was swimming in tons of pudding mixture. I will definetly make this one again.

Apple Dumplings I

I wanted to capture the taste of individual apple pies with these so I substitued frozen pie shells for the dough. I let the shells thaw in the fridge overnight so they were ready to go the next day. At first I was concerned with making everything pretty. Half way through I realized if I put the apple on the section of pie shell, drizzled some sauce on and folded the top over, I could more or less gently mash the shell together around the apple quarter. The last half looked/tasted just as good and took much less than half the time. These had all of the flavor of a good apple pie with less work. Vanilla ice cream optional!

Hungarian Mushroom Soup

The rich, unique flavor makes this soup one of my very favorites. I buy pre-sliced shitake, oyster, portabello and button mushrooms at the grocer. Rather than waste some, I end up putting in about 2 cups more mushroom than is called for. I also run about 1/3 of the finished soup through the blender. Between these two changes, I end up with a thicker soup which is generally how I prefer soup. I have people add their preferred amount of sour cream directly to their bowl so that they can personalize the soup to taste. Unlike some cream of mushroom soups, this soup's primary flavor is mushroom! I could rave for days but I'd better save some writing space for the next folks...

Corn Chowder II

I'm the only vegetarian in my group which means I am always on the hunt for a new recipe that is non-vegetarian friendly. My husband and our friends all loved this recipe. I prefer corn chowder that is thicker, more along the lines of chili. I substituted half and half for the milk and added some corn starch also. It turned out wonderfully. I may try just limitting the amount of milk next time instead. Very filling and the spicy flavor was a pleasant suprise!
