The rich, unique flavor makes this soup one of my very favorites. I buy pre-sliced shitake, oyster, portabello and button mushrooms at the grocer. Rather than waste some, I end up putting in about 2 cups more mushroom than is called for. I also run about 1/3 of the finished soup through the blender. Between these two changes, I end up with a thicker soup which is generally how I prefer soup. I have people add their preferred amount of sour cream directly to their bowl so that they can personalize the soup to taste. Unlike some cream of mushroom soups, this soup's primary flavor is mushroom! I could rave for days but I'd better save some writing space for the next folks...
