Turkey Tenderloins

This is awesome! My husband told me I can add this to the regular dinner schedule, which means it was a huge success! It is like Thanksgiving but with A LOT less time and just as much flavor. I used fresh thyme, sage and rosemary so the flavor really popped! I also substituted coconut aminos for soy sauce (paleo-friendly)and added about a Tbsp olive oil to the marinade. It only took 16 minutes in my oven, and it came out juicy and flavorful. Will be making this again soon!

Carolina Fish Cakes

My boys love this recipe, and have requested it twice since I originally made it about a month ago. I prefer pan frying, since it definitely adds texture and flavor. I have used tilapia and flounder, they pretty much taste the same in this recipe so I just buy whichever is on sale. I also doubled the amount of Old Bay since my family loves the flavor. Besides that, the recipe is pretty spot-on.

Chipotle Crusted Pork Tenderloin

3.5 stars I spiced this up with some homemade adobo sauce and additional chipotle spice. We like heat, and even the kids enjoyed the flavor without it being too much.

Curry Pumpkin Soup

This has become a common weekend request from my family, and I love that it is SO EASY to make. My alterations: 1 c. finely chopped red onion for some additional texture and flavor, coconut milk instead of cream, fish sauce instead of soy, and I serve it over a slice of crusty french bread (toasted in the oven like a huge crouton.)

Overnight Blueberry French Toast

This was a HUGE success and has immediately become a brunch staple. I made it for a family girls' weekend and the ladies raved about it, demanding that it become an annual tradition for the girls weekend getaway. I incorporated some of the changes recommended by other reviewers, mainly, use 12 oz of cream cheese and hearty french bread with a good crust, reduced eggs to 10 and added cinnamon to the egg/milk mixture. For the blueberry sauce, I added some fresh lemon juice. The one thing I want to experiment with, is getting some crunch into the recipe - the bread on top crisped up a bit, but some additional crunchy texture would send this over the top.
