About this Cook
I'm a foreign language teacher.
My favorite things to cook
I love international foods and have made many things that most people have never eaten or tried to make. I'm one of those cilantro-eaters.
My favorite family cooking traditions
Er . . . I will not miss Thanksgiving dinner with my family. Nobody makes a better roast turkey than my mother, who is such an accomplished chef she should be teaching a cooking class.
My cooking triumphs
Too numerous to mention. . . but I'll give credit for many good meals which were inspired by my co-chefs at Allrecipes.com. I think that my biggest culinary accomplishment was learning how to cook healthy, lose weight and keep 27 pounds off, while enjoying foods from my kitchen.
My cooking tragedies
Lizard loaf - I once made something so gross that I really could not eat it. It was made of squirrel and other meats. I made the mistake of cooking the meats before putting them into the pate. The texture was spongy and horrible.

Pumpkin Muffins II
I make 2/3 of a recipe because a full recipe is too much for one 12cup muffin pan. I cut the spices and salt in half. I add nuts and raisins also. I substite part of the white flour with 1 c oatmeal and 1/4 c ground flax seed. Now, you have 5 stars and better nutrition too.

Chicken with Lemon-Caper Sauce
I would advise you to try this with 1 T capers first before using 2T, and perhaps 1T of lemon juice. The capers and lemon are very tart together. I added 2T cream and 1/2 t cornstarch because I wanted my sauce thicker and more like a creamy lemon caper sauce. It was too tart, so I added 2T butter. Although that did not keep it from being tart, it still did taste good, because I like capers, but I think I will search for a more reliable recipe next time. The sauce was good on the fish and on plain zucchini.

Cranberry-Jalapeno Relish
This was perfect to go with a Southwest turkey. I tried fresh cranberries and that was pretty tart, so I added 2T honey. I used the zest of the orange and lime also and chopped it fine. I chopped it all by hand, but still needed to give it a pulse or two in the food processor. This was also good with tortilla chips. 1/2 c orange juice is one orange, and 1/4 c lime juice is one line. I used 1 clove garlic. I look forward to trying it with dry cranberries also sometime. Can easily make a day or two ahead. Thanks! It's a fantastic recipe!
