I tried this recipe tonight and instead of Ritz crackers I used honey graham crackers because that's all I had on hand. I wasn't sure how the final product would turn out. I mixed the graham cracker crumbs with melted butter and spread over the pineapple mixture and then baked. It was terrific, and cold might make a great dessert. Gonna find out later tonight. Just wished there was more leftovers.
