Chocolate Zucchini Cake IV

Overall the taste is good, but I'm VERY glad I decided to check the cake after 50 minutes. I wish I'd checked it at 40. After 50 minutes it was completely done and even a little dry. If I make this again, I will definitely decrease the baking time.

Heather's Grilled Salmon

This was really delicious! I let it marinate about 2 hours and cooked on an indoor grill (it was 18 degrees outside). Made for a lovely meal served with baked potatoes and sauteed green beans, peppers, and mushrooms.

Meatball Nirvana

DH has always made the meatballs around here. Not any more. I made a double batch of these today and tossed some into my spaghetti sauce. Not only were the meatballs a HUGE success, but they added extra flavor to the sauce and made the whole meal amazing. I'll make these again and again! Thanks, LTH!

Smothered Pheasant

This was good, but the pheasant was just a tiny bit dry. I added a bit of garlic powder on the pheasant before dredging in flour, and added salt, pepper, and garlic powder to the flour as well. I also added fresh sliced mushrooms which I sauteed in the butter. I only used 3 half breasts, but still used the whole two cups of half and half. I actually wished I'd used more. I served this over campanelle and we enjoyed it!

Delicious! This was simple to make and turned out well. I halved the recipe and baked it in an 8x8" dish. The baking time remained the same. Great use of fresh berries!

Four Cheese Stuffed Jalapenos

Definitely a "knife and fork" appy. They are very soft and the cheese is gooey. I followed the directions almost exactly, realizing after I'd filled the pepper halves that I'd forgotten the black pepper. These were still very tasty. They are on the spicy side for sure. Thanks for sharing the recipe!

Sicilian Homemade Ricotta Cheese

This is amazingly simple and delicious. The hardest part was finding the cheesecloth to strain it. Whether it's a "true ricotta" or not is not really all that important to me. It tastes great and works in recipes. I used it in a chicken recipe and it was perfect. It works well as a spread on crackers (try adding fresh chives or a little powdered ranch). Love this stuff! I'll definitely be making it again. I may halve the recipe the next time to make a smaller amount.

Pesto Sauce

I've made this several times. It's so good and so easy - forgiving, too. I don't measure very carefully with this type of recipe. I had 5 cups of basil leaves this time so I added extra of everything and just added oil until it was the right consistency. Yum!!

Delicious Spinach Salad

This is a tasty and simple salad. I left out the olives as we don’t care for them. I also used slivered almonds as I had them on hand and pine nuts are so incredibly expensive. The dressing is a little on the tart side, but has a nice, fresh taste. I enjoyed the addition of the feta cheese as well. This was a great use of my fresh garden spinach.

Homemade Blueberry Pie Filling

This is quick and simple to throw together. I intended to use it as a topping for a cheesecake, but it got cloudy upon cooling. I ended up changing my plan as a result. I’ll be making some mini pies to use up the filling.

Big James' Pork Rub

This rub is quick to throw together and tastes great. I used it on baby back ribs and it really gave the meat a wonderful flavor. Ignore the calories and servings on this recipe. I had a lot left over after coating a full slab of ribs on both sides.

Heirloom Blueberry Cake

I halved this recipe and baked it in an 8x8 pan. Otherwise, I followed the recipe exactly. Even with the smaller cake, it still took the full baking time to test done. This is a nice, moist, classic blueberry cake. We enjoyed it with a little whipped cream and additional fresh berries.

Italian Cheesecake Cookies

Okay. These are tasty. I quartered the recipe but otherwise followed the directions, including the baking time. My baking dish was slightly larger than 1/4 of a 9x13 dish, but the cookies were a little on the soft side. I topped them with cherry pie filling.

Orange Vinaigrette Dressing

Very light and tasty - this dressing is ideal for a summer salad. It's a little on the thin side, but there is no "thickener" in this recipe, so that's to be expected and actually allows you to use less of it.

Blazing Brisket

I did not use the fatback nor the shortening. (I have a non-stick roasting pan). This is a LOT of garlic. The sweet potatoes did not taste that great after roasting with the meat and went uneaten - they were very salty, from the bacon I'm assuming. We didn't care for the dipping sauce. As someone else mentioned, a creamy horseradish sauce would probably work better.

This is a very simple and basic way to cook chicken. I did use drumsticks for myself, but baked a chicken breast for my husband as he prefers white meat. Tasty!

Berry Cornmeal Cake

This was okay, not great. It did remind me of cornbread and it took much longer to bake than indicated. The resulting cake was somewhat bland, despite the fruit. It needed a shot of whipped cream or ice cream. I had several desserts baked at once and this one did not get eaten. I probably won't make this again - sorry.
