California Chicken Spaghetti
Altogether NOT spectacular. I did make some modifications based on what I had available: used 1 can diced tomatoes (as suggested by other users) and regular cajun seasoning because I didn't have cajun blackening seasoning. I also used 100% whole wheat angel hair (we abandoned white pasta long ago). The dish turned out spicy, but nothing to write home about. I doubt I'll make it again.

Pesto Chicken Florentine
Great recipe, with some modifications. I omitted the alfredo sauce (don't like it) and upped the pesto to approx. 3 tablespoons. Added 3 tbsp. of diced tomatoes. I also seasoned the chicken beforhand with garlic salt, black pepper, italian seasoning, garlic powder, and a touch of cayenne pepper. The result was so good that there were no leftovers!

Denise's Peanut Chicken
I don't know why no one has mentioned this, but this recipe left much to be desired--it was just kind of bland. My boyfriend and I agreed that there's "something missing" from this recipe-- some kind of kick that just isn't there. I even upped the cayenne pepper exponentially, but it didn't help. I don't think I'll make this particular recipe again.
