About this Cook
Single, childfree, retired from FAA. Am diabetic and kidney failure so have to avoid or reduce eating quite a few foods. No high carbs, no high phosporus, no high potassium, which if I really stuck to it would eliminate virtually everything. Or at least everything that's good eating.
My favorite things to cook
Anything with ground beef, spaghetti, etc. Also steaks, chops, and spicy foods. Prefer cooking for breakfast and dinner.
My cooking triumphs
A beautiful turkey one Thanksgiving, my first and so far last one. But it came out brown and succulent and I didn't forget to put out the gizzard bag. And fresh green beans, delicious.
My cooking tragedies
For that same day, a rather poor Mac 'n Cheese. I mistakenly used condensed milk instead of regular or evaporated milk. It was really thick and not very palatable.

Tater Crisp Chicken
Very good baked chicken altho I regret to say that I was a bit heavy-handed with the garlic powder. I dumped the potato flakes, garlic powder, pepper and several other herbs and spices into a storage bag, melted 3/4 stick of butter for 6 legs, shook them in the bag and baked. I'll be making this again, tho.

Lemon Pepper Pork Chops Baked and Served With Apples
This sounds delicious altho if I prepare it I'll probably leave off the apple component.

Dazzlin' Chicken -n- Dumplin's
I used this recipe for the basis of my chicken & dumplings this evening. I had some roast chicken left over after I made a quite sizable bowl of chicken salad along with the carcass. So I got chicken broth and set the chicken parts and bits to simmer. I added onion, celery and a small can of drained corn, after fishing the chicken out of the broth, along with the recipe spices and a few extras. While that simmered I made the dumplings with canned biscuits that I rolled out thin, cut into squares, and threw in the pot when the veggies were soft, in small batches. What I've learned about dumplings is that you NEVER put the top on, at least while they're forming. My dumplings turned out great altho I don't think I put enough of them in the broth, so that will be for next time. Except that it was peppery, my favorite spice, these chicken & dumplings came out better than I thought the would.
