Savory Spinach Casserole
This is a very easy recipe that is easily made "more healthy" without significantly sacrificing tastiness by using low-fat cream cheese and skim milk. I added a touch of salt and pepper to perk it up as well. A very handy addition to a big holiday meal--and one that can be done ahead.

Simple Mexican Rice
Fantastic! Used tomato sauce instead of paste and served this with empanadas and bean salad. It is a keeper! Very tasty, very different, and very easy!

Creamed Onions II
Pleasant but not exceptional. Need to at least triple the spices for a flavorful dish. Next time I will try to increase the roux as well, because the sauce is a nice texture but does not adhere to the onions.
