Wacky Cake VIII

My family love this cake. The only thing the recipe I have has different is 1/2 soda, but it turns out great every time.

BLT Pasta Salad

I was going to make 1/2 recipe but after cooking 1/2 the pasta and bacon I decided to go for the whole thing. I read many suggestions and substituted 3 green onions, bought grape tomatoes, some finely grated sharp cheddar cheese, and a package of baby spinach. Also added 1/2 c. mayo. Refrigerated it overnight. Added spinach to mixture and topped with bacon right before serving. Didn't need any extra Ranch dressing. This salad is big! It filled a 4 qt. glass bowl. It was all gone except for a portion that my husband can eat for two separate lunches, and he doesn't eat a big lunch. By far the hardest thing to do was to cook the lb. of bacon until it was really crispy and to cut that bacon up into small pieces. I seldom have a use for salads such as this, but if I did, I would certainly make it again.

French Breakfast Muffins

Best Spanish Rice

Easy Pie Crust

Almost exactly the pie crust in the pie plate recipe a friend gave me years ago. I finally got the guts to try it and now it is all I ever use. Obviously could not be used as an upper crust, but I haven't faced that situation yet!! My daughter, who is not into baking, wanted to make the pumpkin pie from scratch this last Thanksgiving and did the crust without a hitch. It is SO easy.

Irish Soda Bread in a Skillet

I have made this twice now with very positive results, but with the help of many suggestions made by others. I made it Friday night and it was gone in one day. There are just my husband and myself. I made it again Sunday morning for a special dinner after church. It went well with tossed green salad and Grandma Coffee's Beef Barley Vegetable Soup also made with changes. The reason I gave it four stars is because I needed to make those changes. It would have been very bland without them. For the first one I ended up using 2 tsp apple vinegar, 1 tsp baking soda, 2 tsp sugar, oregano and basil. For the second one I used the 2 tsp apple vinegar, 1 c. regular four and 1 c. whole wheat flour, kosher salt, 1 tsp. baking soda, 2 tsp sugar, oregano, basil, and parsley. This one didn't make it through Sunday. I also heavily buttered a medium sized cast iron fry pan for both and baked it for 25 minutes. The dough is very sticky but I kept taking it off of one hand with the fingers of the other hand and kneaded it with lots of flour. The second one will be a staple in our home. Thanks, Canadian Girl, for this recipe.

Strawberry Pie II

Fantastic start to a great chocolate strawberry pie. Found that next time I will use 2 qts of berries, and double the cornstarch because I found that overnight the pie had leaked liquid. Enough to cover the 1/2 pie plate that was free of pie. Did BTEAMMOM's suggestion and covered baked crust with melted chocolate. And mashed 1/4 of the berries like others suggested. Others suggested slicing rest of berries. Half of those remaining berries went into the chocolate covered crust, then sprinkled chocolate chips over that, then poured 1/2 of the mixture over that. Repeated the process, which was no big deal as the strawberries were already sliced. Put in tooth picks and covered with plastic wrap and into the frig. When set, put Cool Whip over all, and Wah-lah! It was adored by 5 yr old granddaughter who, for the last 3 years, has insisted on a strawberry-chocolate pie for her overnighter with us!!

Chicken Cordon Bleu Casserole

only things I changed were to add 2 cans of cream of chicken and 1/2 cup milk - too runny and way too salty - nothing to hold it together - also frying up all those chicken cubes was more work and grease than I wanted to deal with

J.P.'s Big Daddy Biscuits

I made these on the spur of the moment when I realized that I didn't have a carb to go with a vege main dish. I only needed 2/3 c. milk. I put it all in a ball and patted it down too much. I had about 3/4" and used a regular glass to cut them out. Only got 5 biscuits, which was more than I needed. Heated one up with butter this AM. It was OK. I think the toppings are what make this biscuit great. By itself, it was fine, but nothing to rave about.

Crunchy Romaine Toss

I halved the recipe as I was just making it for my hubby (can't eat onions) and the fixings came out fine-obviously had to use a whole ramen noodle pkg-I will make it again, but next time around I will let him add the dressing himself over the portion he is eating. Put the walnuts right into the salad. I always let people add their own amount of dressing. I should have known better.

One Banana Muffin

Easy Cinnamon Rolls

Followed recipe - except melted more butter and slathered it on the dough, put on more cinnamon and more walnuts - didn't close a well so made sure all edges were up against the side of the pan or another roll where they both had room to rise. Wonderful things.

Eclairs II

Made according to recipe as much as possible as I cut the serving size to 3. Will do the 'crust' much differently next time. Tried to shape it with a knife as one review suggested, but even though they looked good on parchment paper, I wasn't pleased with the boxy look I ended up with. Next time, I will actually take a gallon freezer bag and put the dough in and squeeze it through. The filling went fine, but my husband said he preferred the regular custard kind, but it was a good substitute. The chocolate I messed up on and put the whole amount of milk instead of water right away. Won't do that again. But I put in extra powdered sugar and it turned out OK. Dipped the top in the chocolate before putting in on the 'custard'. Had plenty of custard and chocolate left over so I put them together and my daughter ate it as a pudding!

Chicken and Mushroom Saute

I didn't pound the chicken breasts. Didn't brown them in anything, just browned them by themselves. Needed to add extra cornstarch for a gravy-like consistency. My husband could tell they were canned mushrooms. When I make it again, I will have to buy the real thing. A good recipe to have around. Nice and easy.

Penne, Tomato, and Mozzarella Salad

Really good salad. Took to a potluck. Used garlic powder as that was all I had. Didn't add balsamic vinegar because I didn't have any, so upped the red wine to 2 tablespoons. Will make again in summertime. I can't eat onions so I 1/2 the recipe.

Country Pumpkin Muffins

Followed recipe mostly! Did the 1/2 white-1/2 brown sugars, skipped water as mine was partially frozen pumpkin meat that made approx 2 cups, left out raisins, added 2 tbsp vanilla, and added 1 cup chocolate chips. My husband loved them! I ended up with 36 muffins :) Although the last 12 WERE smaller than the previous 24! He had 4 of them last night alone. Good thing cause he has a LOT of them to eat!

Donut Muffins

I have not made these yet because I have a question. They sound wonderful but what if I only have a regular muffin tin of 12 and don't want to buy a mini muffin tin for just this one recipe? Will it still work? After I find out the answer then I will make them if I can use a regular muffin tin and rate them. Thank you. Should not have given this a 5 star rating. Made them with the 1/4 brown and 1/4 white sugars and also 1 tsp vanilla. They did not thrill my husband. He said they were "OK" but would be fine if I didn't make them again. Oh well!
