Sour Cream Chicken Enchiladas

We don't keep the spicy stuff around, so just used medium Pace salsa. Had extra sour cream and cilantro from a different recipe that had to be used up. So I found this. Used up what I had left of an onion. Only had Costco Panco chicken breasts. So I had to make lots of substitutions. But they turned out great! He loved them!! :)) Just goes to show a recipe like this can be used in a variety of ways. I was grateful for it.

Lemon Square Bars

Hubby and work mates loved them. Didn't change a thing. Did line pan with parchment paper as no matter what I do or don't do, any lemon bars/squares stick to pan :(

Lemon Garlic Tilapia

My husband and daughter loved this. Because I like things easy, I put the margarine, garlic powder, lemon juice, and parsley right along with 3 frozen tilapia fillets into a covered casserole dish that just held the fish. I doubled the sauce ingredients as they wanted a sauce to put over their brown rice. Cooked it for 30 minutes and it was perfect with the rice and stir fried veges. Definitely will make again.

Strawberry Pie II

Fantastic start to a great chocolate strawberry pie. Found that next time I will use 2 qts of berries, and double the cornstarch because I found that overnight the pie had leaked liquid. Enough to cover the 1/2 pie plate that was free of pie. Did BTEAMMOM's suggestion and covered baked crust with melted chocolate. And mashed 1/4 of the berries like others suggested. Others suggested slicing rest of berries. Half of those remaining berries went into the chocolate covered crust, then sprinkled chocolate chips over that, then poured 1/2 of the mixture over that. Repeated the process, which was no big deal as the strawberries were already sliced. Put in tooth picks and covered with plastic wrap and into the frig. When set, put Cool Whip over all, and Wah-lah! It was adored by 5 yr old granddaughter who, for the last 3 years, has insisted on a strawberry-chocolate pie for her overnighter with us!!

Mouth-Watering Stuffed Mushrooms

I printed this out and doubled the recipe as some had suggested, and bought spinach as others had said. Didn't see it mentioned anywhere what a pain it is to get out and dice up mushroom stems. My husband ended up doing the last 12 of them for me. And we were not making tiny pieces. We were just dicing. We definitely did not have to double the 10 oz. of spinach or the 8 oz of cream cheese. We stopped before we put in the 2nd cream cheese and 1/2'd the mushroom stems, garlic, parmesan cheese, and spinach mixture before we filled the mushrooms. Needless to say I have some spinach, mushroom stem, garlic mixture to give him for dinner some night. I have learned my lesson and I will be reading recipes much more diligently from now on. And I will, God-willing, never make this recipe again.

BLT Pasta Salad

I was going to make 1/2 recipe but after cooking 1/2 the pasta and bacon I decided to go for the whole thing. I read many suggestions and substituted 3 green onions, bought grape tomatoes, some finely grated sharp cheddar cheese, and a package of baby spinach. Also added 1/2 c. mayo. Refrigerated it overnight. Added spinach to mixture and topped with bacon right before serving. Didn't need any extra Ranch dressing. This salad is big! It filled a 4 qt. glass bowl. It was all gone except for a portion that my husband can eat for two separate lunches, and he doesn't eat a big lunch. By far the hardest thing to do was to cook the lb. of bacon until it was really crispy and to cut that bacon up into small pieces. I seldom have a use for salads such as this, but if I did, I would certainly make it again.

Beefy Baked Ravioli

Used chicken and 3 cheese tortellini but followed the rest. Too soupy. Had to add more spaghetti sauce to get 3 layers. Would have worked better in a 9x9 casserole dish.

Chicken Noodle Casserole I

only things I changed were to add 2 cans of cream of chicken and 1/2 cup milk - too runny and way too salty - nothing to hold it together - also frying up all those chicken cubes was more work and grease than I wanted to deal with

Chinese Chicken Fried Rice II

Baked Salmon II

I went along with some other people and changed the original recipe. It was blah for us. So next time I will put in 2T eevo, no butter, 2.5tsp garlic powder, and 3T lemon juice. I will also just leave it in the casserole dish and cover it to bake after marinading. I will work with it till we like it as my daughter says it is heavenly.

Baked Paprika-Parmesan Chicken

J.P.'s Big Daddy Biscuits

I made these on the spur of the moment when I realized that I didn't have a carb to go with a vege main dish. I only needed 2/3 c. milk. I put it all in a ball and patted it down too much. I had about 3/4" and used a regular glass to cut them out. Only got 5 biscuits, which was more than I needed. Heated one up with butter this AM. It was OK. I think the toppings are what make this biscuit great. By itself, it was fine, but nothing to rave about.

Crunchy Romaine Toss

I halved the recipe as I was just making it for my hubby (can't eat onions) and the fixings came out fine-obviously had to use a whole ramen noodle pkg-I will make it again, but next time around I will let him add the dressing himself over the portion he is eating. Put the walnuts right into the salad. I always let people add their own amount of dressing. I should have known better.

One Banana Muffin

Follow receipt except sometimes add two bananas. Always use whole wheat flour, 1 add 1 cup chocolate chips, and 1 cup coconut. They are yummy and moist.
