Champagne Shrimp and Pasta

Great recipe. I used half pound of shrimp and half a pound of scallops. I also used 12 ounces of fettucine and there was enough sauce. And I used canned petite diced tomatoes. It turned out to be a delicious meal. The flavors mix very well. It did take longer than what the recipe claims, but it doesn't matter because it's so good!

Louisiana Chicken and Beans Skillet

This is a good recipe if you give it some help. Definitely use stewed tomatoes with salt. I used cajun style stewed tomatoes and seasoned to taste.

Chicken In Sour Cream

This is good, but I did do a little to it. I doubled the sauce so there was plenty for egg noodles and I used chicken breast. I omitted the lemon and dill after the first time because I didn't like what the lemon and stuff did to it. It's great with 1 cup of milk, 2 cups of sour cream, 2 liptons, 2 soups, 2 cans of mushrooms, and pepper. I use the low fat versions of the soups and reduced fat sour cream. Very tasty and easy.

Sherry Wine Sauce Chicken

Pretty good. I was unsure because it seemed like would be a little bland. I used 2 mushroom soups and 1 chicken(not a fan of too much cream of chicken flavor)-the 98% fat free soups-turned out great, 16 ounces of sour cream, and 3/4 cup of sherry. It made a good sauce over egg noodles. I also browned the chicken before baking and I seasoned the chicken with salt/pepper/onion powder as it browned. Very tasty.

Vikki's Red Bean Sausage

This is a hot one but very flavorful. I added about half a cup of chicken broth for more liquid and I omitted the salt. If you go a little easy with the peppers it will still have a nice kick to it.

Mediterranean Stuffed Chicken

This was delicious. I used garlic and herb feta cheese. I also kind of combined this with another recipe I saw and placed the chicken over about 5 bulbs of garlic-I smashed the garlic with a spoon but not completely. And I didn't tie the chicken so the cheese that leaked and garlic made a nice little sauce. The sauce is tasty, I don't eat the garlic bulbs. I baked it for about an hour at 325. I loved it but I'm a garlic lover, I think it would be good w/o the garlic addition as well.

Baked French Fries I

I used vegetable oil and added salt. I just added the seasonings without measuring and I used more than one potato-about three. It was good. I found that it did need the full time and temperature called for. It probably depends on the cut.

Chicken Makhani (Indian Butter Chicken)

This was delicious!! I found a spicy garlic and ginger paste in the Indian section of my grocery store and that added some additional spice. I was also generous with the cayenne pepper and I used a whole onion along with the shallot. I used chicken breast instead of thigh and I added some of the spicy garlic ginger paste to the chicken while I cooked it with the garam and cayenne. In the end it had a very nice kick to it. I'm not a fan of thickeners and this recipe didn't need it at all so I did not use cornstarch. This was the same if not better than the local restaurants.

Buffalo Chicken Dip

I used blue cheese dressing, baked/shredded chicken, added baked shrimp and a bit more hot sauce. I also baked it on 350 for 20 minutes. It is delicious. Just delicious!

Rollups

I added chives to regular cream cheese, chopped proscuitto, and minced garlic. I did not add butter. Instead of rolling it up, I spread the mixture over seasoned chicken breast and cooked on 350 for an hour. The sauce and chicken (very tender) were so tasty. I put it over tortellini. Delicious!

Southwestern Macaroni and Cheese with Adobo Meatballs

Delicious! Meatballs: I used ground turkey, added diced onions and garlic to the meat mixture, added chopped jalapeno peppers instead of powder and used less Adobo than called for (used dashes until it seemed right). The amount in the recipe would have been way too much with Adobo that has salt. Cheese mixture: Instead of cotija cheese, I used a shredded Mexican mixture and used chopped garlic rather than powder. It was so tasty and the meatballs really compliment this dish!

Easy Slow Cooker French Dip

The sauce was very good! I used a pale ale and added minced garlic and a few dashes of steak sauce. It would benefit from the addition of salt and spices according to preferences. Mine slow cooked for about 10 hours, the meat was tender, not dry at all.

Slow-Cooker Chicken Tortilla Soup

This was fabulous! The flavors! I used 1 can of beans instead of corn, hot enchilada sauce, cooked 2 Tysons garlic/wine chicken breasts with soup and added one hot turkey sausage link (crumbled after cooked in soup), added an additional can of tomatoes with chiles, added a few jarred jalepeno slices, halved the salt as my additions included salted items, and used one chicken bouillon in place of broth and 2.5 cups of water. These changes were personal preferences (we like a kick!) and after reading some reviews - I would have not known where to begin without this great recipe!

Curried Chicken

Very good. I've made other curry dishes that took so much more effort. I used chicken breasts and I did not add an apple but to add that sweetness I included several dashes of garam masala in the sauce. I was generous with the curry (used more-red curry) and overall liberal with spices that we like, such as cayenne pepper, dash or two of hot chilli powder, diced jalepenos and red pepper flakes for heat. So easy!
