Zesty Southern Pasta and Bean Salad

I thought this was tasty and wholesome as an different type of side dish. I'll make this when my vegetarian nieces visit. I used whole wheat pasta to make it healthier.

Vegetable and Feta Latkes

This was was quite labor intensive (with the grating & frying) but yummy. I only used 1/4 cup of the feta as my husband sometimes doesn't like some dishes with too strong a taste. Next time though I'll use the 1/2 cup stated in the recipe. I'd also suggest trying 2 eggs instead of 3 as the mixture was pretty soft.

Vegan Black Bean Soup

I liked it better than my husband did. It makes quite a bit so I froze a couple of containers. I used 3 cans of vegetable broth which was more than the 4 cups listed in the recipe. I just didn't want to throw away half of the broth in a can & didn't have another recipe I was going to make soon with vegetable broth. I thought it still had a rich taste. It took me a while to blend the 2 cans of beans & tomatoes in my blender as the mixture was quite thick. I had to stop the blender several times to stir the mixture with a wooden spoon & get some of the blended part up from the bottom before I got it to a smoother consistency. Oh, besides the chopping & blending, the most work was in recycling 9 cans :)!

Chicken Tortilla Soup V

I thought it was good. I ate it with the tortilla chips on the side as I prefer them crispier & my husband put them in the soup. As he doesn't like dishes too spicy, I'd probably try 1/8 tsp cumin & 1/4 tsp chili powder next time & just taste the soup to see if it needed more.

Holiday Morning French Toast

I loved it. I was looking for a vegetarian brunch recipe & this fit the bill. It was nice to make it the night before & just pop it in the oven before my guests arrived. I used a sugar free brown sugar substitute. As my husband thought it was a little too sweet, I might experiment & make it using 3/4 cup brown sugar next time. I used whole wheat bread to make it more nutritious & also cut the bread into about one inch cubes (keeping the crust on), instead of leaving the bread in slices. My other tip is to make sure you have enough of the egg mixture to moisten the bread. I thought it was too dry so I added more egg mixture. Depending on how many slices of bread you use, my guess would be to use about one egg for about one and a half pieces of bread.

Spinach Quiche

This was good. The flavored feta made it more interesting. I made it crustless & put it in a glass baking dish instead of a pie pan. I cut it into squares when serving. If I make it again, I'll try one reviewer's suggestion to mix all the cheese with the spinach instead of putting most of the cheddar on top. I guess you could make it with chopped broccoli if you weren't a big spinach fan.

Spinach Quiche

Pretty good. I topped it with crushed Ritz crackers instead of croutons. I suppose you could top it with parmesan cheese instead as well. My husband thought I should decrease the amount of green onions if I made it again.

Shrimp And Spinach Salad

This makes a very elegant, visually pleasing lunch or side salad. I'd suggest tasting the dressing to see if you want to add a little more honey mustard, to make it a little tangier.

Chicken Marsala

Yummy! My husband actually said, "Umm" while eating it. I used less butter & olive oil & 1/4 tsp oregano as my husband isn't a big oregano fan. I didn't pound it to a 1/4 inch thickness but did pound it a bit. I would double the sauce next time & use more mushrooms as everyone else recommended.

Oven Stew with Burgundy Wine

This was good but I just left the stew on the stove instead of putting it in the oven (one less pan to wash) :). Maybe I'll put it in the oven next time... I also was out of thyme. I added one more cup water but probably only needed half a cup as I guess the water doesn't evaporate on top of the stove as much as it does in the oven. I also used dried low sodium beef bouillion which seemed to be fine. Finally I used red cooking wine instead of burgundy. I guess I did change the recipe but it still had a richer taste from the wine and was a change from just using beef bouillion or having a tomato base in stew.

Apple Crisp II

This was very good, especially the topping. I used Splenda & a brown sugar substitute so my diabetic dad could eat it too. I served it hot out of the oven &, for the rest of my guests, I had vanilla ice cream to put on top. I'd used granny smith apples, & one guest said it was good as it was both sweet & tart. My husband thought it was too sweet so I'll try 1/2 a cup of the white sugar/Splenda & maybe 3/4 cup of the brown sugar/sugarfree substitute next time. I wasn't sure if I was supposed to peel the apples or not but I peeled them. I'd say the size of your baking pan should depend on how thick you'd like the apple part to be. I used 10 apples &, even though my guests enjoyed it, I think the 9 X 13 pan was too big.

Nana's Apple Crisp

Tasty. I left out the extra 1/4 cup butter for the topping as I thought the 1/2 cup I already used was fattening enough. Also instead of the sugars, I also substituted Splenda & brown sugar substitute, & it was fine. I gave this 4 instead of 5 stars as I thought "apple crisp II" was just a little better.

Apple Betty

The 3 star rating may be because I altered the recipe. I mixed melted butter instead of cutting in the butter so I guess I changed the consistency of the topping. My husband liked the crispier oatmeal toppings used in some of the apple crisp recipes better though. I also used Splenda instead of white sugar & it came out fine.

Banana Cream Pie III

I used sugar free puddings so my diabetic dad could eat this. I put the extra Cool Whip on the side instead of garnishing the pie, in case someone wanted to add just a tad. I sometimes make a very light homemade graham cracker crust for pies too (with Splenda) so it has less sugar.
