Meatloaf With A Bite

This was pretty good for a change but my family likes my regular meatloaf recipe better. I substituted Ritz crackers for the saltines.

Cheesy Meatloaf

This just seemed to have a bland cheezy blob in the middle. Maybe it would have been more flavorful with cheddar. Anyway if I was going to keep making a meatloaf recipe that had so many more calories due to the cheese, it would have to taste much better. We threw it out.

Alaskan Salmon Chowder

I'm not sure what the exact taste was that I didn't like. I'm guessing that the evaporated milk may have given it some kind of sweetness that wasn't my cup of tea. I also had a bit of a problem getting all the bones out of the canned salmon. Maybe I would have liked this better with clams & a different milk substitute.

Red Bean Salad with Feta and Peppers

I thought the mixture of kidney beans, chopped cabbage & feta was an interesting combination. My husband liked it better than I did though. I thought it needed something, even with the feta. Maybe adding some Italian dressing would make it less dry & a little more flavorful.

Smoked Salmon and Egg Salad

I thought it was pretty good but my husband didn't care for it. he's not crazy about dill, & he said he couldn't particularly taste the smoked salmon. I'd suggest not dicing the salmon into too small pieces. It might be a little better if you made it deviled, with a little dry mustard or horseradish.

Zippy Beef Casserole

My husband did eat it but I thought the ketchup made it way too sweet. Maybe it would taste better with tomato soup instead of the ketchup. I put crushed Ritz crackers on top instead of potato chips.

Yellow Squash Casserole

My husband seemed to enjoy this but I thought it was too "shmooshy." I did use zucchini instead of yellow squash. Maybe it would be better with one egg instead of 2.

Shrimp Etouffee II

I was curious how this microwave recipe would turn out. You may have to adjust the microwave cooking time depending on how your fast your microwave works. I microwaved it for less than the recipe called for. I think I did the veggies for 7 minutes. Next time I'll try 6 minutes. I used defrosted cooked frozen shrimp so I cooked it for a shorter time when I added the shrimp so they wouldn't become rubbery. My husband doesn't like stuff too spicy so I only added 1/8 tsp hot pepper sauce & 1/8 tsp cayenne & just brought some hot sauce to the table.

I thought it was interesting but my husband wasn't crazy about it. For my taste, it needs a DASH of some spice(s) like chili powder, cumin, and/or cayenne.

Banana Cream Pie III

I used sugar free puddings so my diabetic dad could eat this. I put the extra Cool Whip on the side instead of garnishing the pie, in case someone wanted to add just a tad. I sometimes make a very light homemade graham cracker crust for pies too (with Splenda) so it has less sugar.

Apple Betty

The 3 star rating may be because I altered the recipe. I mixed melted butter instead of cutting in the butter so I guess I changed the consistency of the topping. My husband liked the crispier oatmeal toppings used in some of the apple crisp recipes better though. I also used Splenda instead of white sugar & it came out fine.

Nana's Apple Crisp

Tasty. I left out the extra 1/4 cup butter for the topping as I thought the 1/2 cup I already used was fattening enough. Also instead of the sugars, I also substituted Splenda & brown sugar substitute, & it was fine. I gave this 4 instead of 5 stars as I thought "apple crisp II" was just a little better.

Apple Crisp II

This was very good, especially the topping. I used Splenda & a brown sugar substitute so my diabetic dad could eat it too. I served it hot out of the oven &, for the rest of my guests, I had vanilla ice cream to put on top. I'd used granny smith apples, & one guest said it was good as it was both sweet & tart. My husband thought it was too sweet so I'll try 1/2 a cup of the white sugar/Splenda & maybe 3/4 cup of the brown sugar/sugarfree substitute next time. I wasn't sure if I was supposed to peel the apples or not but I peeled them. I'd say the size of your baking pan should depend on how thick you'd like the apple part to be. I used 10 apples &, even though my guests enjoyed it, I think the 9 X 13 pan was too big.

I thought this was tasty. I microwaved some at work for lunch & 3 people asked me what smelled so good. Then in my lunch room, a stranger asked me what I was eating, that it smelled delicious.

Oven Stew with Burgundy Wine

This was good but I just left the stew on the stove instead of putting it in the oven (one less pan to wash) :). Maybe I'll put it in the oven next time... I also was out of thyme. I added one more cup water but probably only needed half a cup as I guess the water doesn't evaporate on top of the stove as much as it does in the oven. I also used dried low sodium beef bouillion which seemed to be fine. Finally I used red cooking wine instead of burgundy. I guess I did change the recipe but it still had a richer taste from the wine and was a change from just using beef bouillion or having a tomato base in stew.
