Chicken Salad On Cantaloupe Rings

This was tasty. I probably wouldn't bother to make this chicken salad on a regular basis to bring to work but it would be nice for an elegant luncheon. I guess you could experiment on the type of mustard (which had a dominant taste) that you liked to add. I used Gulden's.

Old-World Cabbage Soup

I remember many years ago having a delicious sweet 'n sour cabbage soup. I thought this soup was too sour. It might be tastier if you added some apple chunks that could dissolve during the cooking process & maybe a little sugar. I think the soup did need some salt & pepper too. Anyway, I didn't bother to microwave the vegetables 1st, as one reviewer had said it wasn't necessary. I also used a package of coleslaw that eliminated this one chopping step.

Insanely Easy Vegetarian Chili

I drained & rinsed the kidney beans & corn & just added a little water to the pot. I also left out the oregano due to a personal preference of my husband. I served it with shredded cheddar, to be added at the table. This dish actually was a little sweeter than the chili recipes I've made in the past. I'd add more chili powder if I make it again.

Fettuccini Alfredo I

This wasn't bad. I added some defrosted cooked shrimp to the sauce at the end, just to heat it up. I also chose to put hot pepper sauce & crushed red pepper on the table, to be added if someone wanted it, instead of adding it to the sauce during cooking. I liked the crushed red pepper better. I wonder if a little sherry might have enhanced the taste. Even though this was a lower calorie version (as it doesn't use cream, half-and-half, or cream cheese), I probably won't make it again as my husband doesn't like rich foods that much.

Proper English Cottage Pie

I substituted garlic & onion powder for the cinnamon & Italian seasoning. I also used just a little butter & milk when making the mashed potato topping & added a litle garlic powder to the potatoes. This had a nice flavor. Some other shepherd's pie-type recipes have been too bland. I may experiment with adding peas to the beef mixture next time & possibly some Worcestershire sauce as another reviewer suggested. This was almost overflowing in a 10" pie plate so I may put it in a rectangular glass baking dish next time.

Six Can Chicken Tortilla Soup

This was pretty good but I think it needs a little more of a kick-some chili powder, cumin &/or cayenne, to one's taste. I added some slivered cooked chicken instead of the canned chicken.

Green Chili Casserole

I used one 7 oz. can & one small can of chili peppers as I thought two 7 oz. cans seemed like a lot for 4 eggs. Anyway, the chile pepper taste was still overwhelming for us. Different strokes for different folks. Maybe we would have liked it better if the recipe had only one 7 oz. can or even just one small can, which would still have given it a litle zip.

Salisbury Steak

This was tasty. I added sliced fresh mushrooms to the sauce. I only used 1 tsp. of Worcestershire sauce as I wasn't sure if it would be too tangy with a Tbsp. I'll increase the Worcestershire seasoning when I make it again to adjust it to our taste (next time 1 and 1/2 tsp.). I didn't flatten my patties much. My oval patties actually looked like little meatloafs.

Chicken Noodle Casserole II

I'm guessing that if you like tuna noodle casserole that you'd probably like this. I added some sliced fresh mushrooms & mixed some cheddar with the jack cheese. Even with the addition of the chili powder called for in the recipe, we thought this was pretty bland. The bread cubes on top were a bit strange. I'd used whole wheat bread cubes. If you like this type of recipe, I'd think that crushed Ritz cracker crumbs or potato chips would make a tastier topping.

Lentil Soup

I liked this more than my husband which is why I only gave it 3 stars. I think my husband would have liked less basil. Anyway, I added some vinegar to some of the soup when reheating it & I liked the batch without the vinegar better. The spinach is a nice touch. You need to be sure to add enough salt (& pepper) for flavoring. One other thing-I had to add more cups of water as the water evaporated during cooking. I added more water when I reheated portions too as it was just too thick.

Pasta e Fagioli a la Chez Ivano

I roughly halved the ingredients, except for the garlic. I thought one jar was way too much so I used a heaping teaspoon. Anyway, it's obviously a personal thing but there was some seasoning that I didn't like. I'm guessing that it may have had too much thyme for our taste.

Chicken Quesadillas

I enjoyed them as a change from fajitas. I took one reviewer's suggestion and put one tortilla on the bottom, put the filling on the tortilla, & put a 2nd tortilla on top. I cut it into quarters after cooking. I was a litle confused on the brushing water or not brushing water suggestions, to make them crispy or not make them crispy!?! Well, I wanted them crispier (as opposed to fajitas) so I brushed the top tortilla with water, & I think the quesadillas did become crispier. Also I left out the bacon & used my own seasoning, instead of fajita seasoning. I also put cheddar & jack in the filling. You really can make this to order. My son doesn't like peppers & onions so I just left those off his quesadilla psuedosandwich. One last tip... I put the tortillas on a foil lined cookie sheet. If you do this, be sure to spray the aluminum foil with Pam. The second time I made these, I didn't use Pam & they stuck to the aluminum foil!

Taste of Home's Pasta Primavera

We thought the sauce was bland & heavy. I microwaved the broccoli 1st for a little while before adding it to the sauce. I also added fresh mushrooms & thinly sliced chicken to the recipe. Even with parmesan-romano cheese, it was "blah" tasting.

Mostaccioli with Spinach and Feta

I'd make this for company. I combined this recipe with the instructions for "Suki's spinach and feta pasta" which is almost the same recipe. I used a 6 oz. bag of baby spinach that I washed & chopped & also used whole wheat penne. I sauteed the garlic for just a little while 1st. I added salt & pepper & also added 1/2 a pound of defrosted shrimp, just to warm it up, before adding the pasta & feta cheese (I happened to have plain feta in the frig). If you keep stirring the mixture at the end, the feta melts & the sauce gets an orangy, creamy texture. I also put red pepper flakes on the table, if someone wanted even more zip. I'll try 3/4 of a cup of feta next time as my husband thought the feta had a strong taste, although I loved it & we finished the whole dish.

Suki's Spinach and Feta Pasta

This was delicious. You know how reviewers say a recipe was restaurant quality? Well, this one was. I'd make it for company. The combination of the spinach, tomatoes & feta results in a creamy, orangy colored sauce. Anyway, I combined the instructions/ingredients for "mostaccioli with spinach and feta" which is almost the same recipe. I used a 6 oz. bag of baby spinach which I washed & chopped. This time, I left out the onions & mushrooms & put the red pepper flakes on the table as I thought my husband would like a milder taste. I cooked the garlic first, just for a little while, but not to brown it. I used whole wheat penne. I also added some defrosted frozen shrimp (1/2 a pound) to heat for a little while, before adding the pasta & feta. I kept stirring the pasta & feta till the feta pretty much dissolved & it had a creamy texture. My husband thought the feta should be decreased a bit (although I loved it) so I may use 3/4 of a cup next time.

Pasta e Fagioli I

I'm giving this 4 stars as my husband enjoyed it but it seemed a little too tomatoey to me. Maybe I'd like it better with only one can of stewed tomatoes & maybe an extra can of chicken broth. Anyway, I had a little problem with the stewed tomatoes. I bought a brand name (not just the store generic kind) & the chunks were huge. They didn't break down in the cooking process, even though I simmered it longer than the recipe said. I finally took a colander & put it over a large Corningware pot, drained the soup, picked out the stewed tomato chunks, chopped them up, & then put them back in the soup. For the reviewer who was asking about the cannellini beans, I found a can that said they were white kidney beans.

Mom's Chicken Cacciatore

It tasted OK but not good enough to make again. I used boneless chicken breasts, & they did come out moist. The addition of the white wine still gave it a blander, just tomatoey taste. I'm guessing that I'd like the taste of a marsala or red wine better, instead of the white wine.

True-Blue Potato Salad

I love blue cheese dressing & crumbled blue cheese in salads but I just wasn't crazy about this combo. The blue cheese taste just seemed overpowering in this dish.

Italian Vegetable Soup

This was hearty & nutritious. I used 4 Herbox low sodium beef packets (which is what I had in the house). It did need more salt. I used one can of light colored kidney beans & one dark colored one. I measured 2 cups of chopped cabbage from a coleslaw package. I added 2 cups water when I added the cabbage, corn, etc. If you don't add water, it's a thick stew, instead of a hearty soup. My husband isn't wild about the taste of canned green beans so I may add frozen ones if I make this again. I also used whole wheat pasta (which I cooked separately) to make it healthier. I served the pasta in a separate bowl, to be added to the soup at the table, as I'd read that cooking/simmering pasta in the soup could make the pasta too mushy. Finally, when serving, I added some grated parmesan to my soup while my husband had his plain. I'm bringing some soup to work for lunch tomorrow.
