I LOVE LOVE LOVE to cook and bake for family and friends! One of these days I hope to either open my own coffehouse/cafe or work for the Better Homes and Gardens Test Kitchen (how cool would that be?!). Besides cooking and baking and trying out new recipes, I also love camping, hiking, traveling, photography, singing, swimming, and watching Food Network (go figure).
My favorite things to cook
I don't know that I actually have a favorite but I would say I really enjoy baking cookies, cakes and other desserts.
My favorite family cooking traditions
As a child I had a blast making fudge, candy, and popcorn balls with my parents and siblings. These days I would say my favorite traditions are helping with our holiday feasts and goodies.
My cooking triumphs
Most of my rave reviews have come from my cheesecake recipes, particularly my chocolate-chip or my peanut butter chocolate-chip. My snickerdoodle and peanut butter cookies go over pretty well too. For appetizers, my Boursin stuffed mushrooms are always a huge hit. And my easy chocolate cake (made with just a box of cake mix and a can of diet cola) topped with fat free cool whip and fresh raspberries always make everyone smile (whether they are dieters or not).
My cooking tragedies
It could have been a tragedy but I found a way around it. In a rush to get a dessert together I turned out a dark chocolate bundt cake onto a platter too soon and it fell in crumbles. I grabbed a trifle dish and layered the crumbled cake with white chocolate pudding and whipped topping. I just sprinkled some chocolate chips on top, and was ready to roll. Everyone was crazy about it, and no one new it was created on the fly!

White Chocolate Chip Oatmeal Cookies
Just made these today to fill a sweet-tooth craving! Very good basic recipe that I tweaked a little. I was a little short on the rolled oats so a supplemented the difference in flour. I also opted to add some dark chocolate mini-chips (about a half cup) just for contrast. Turned out perfect! Will probably make these again. =)

Banana Chocolate Chip Dessert
Very good and moist! Missing a little something though, maybe cinnamon? Anyway, to give it a little something extra I had about 1 cup of leftover maple pecan glaze (this was from the comments section from the Pumpkin Cheesecake II recipe I reviewed a little over a week ago. It contained whipping cream, chopped pecans, granulated sugar and maple syrup, simmered over the stove for 20 minutes) to which I added 1 1/2 cups powdered sugar to make a frosting for this banana bar/cake dessert. Made a great combination! YUM!!

Pumpkin Cheesecake II
Made this for Thanksgiving this year. It was very well received! Extremely rich and smooth. I added just a little clove and pumpkin pie spice about 1 tsp each to the recipe to give it a little extra zip. I also used the maple pecan glaze recipe for the top of the cheesecake that I saw in another review. Excellent recipe!!
