Alice's Sour Cream Chicken Breasts

Like others, we skipped the microwave. I greased a cast-iron pan with olive oil, and cooked the chicken covered, turning once. (This kept enough liquid in I didn't need to add any.) Then I drained the liquid it made and added the rest of the ingredients as specified, and simmered uncovered for maybe 30 minutes. No need for it to be too thick -- the sauce is delicious on rice.

Quick Chicken And Wine

Like others, I lightly floured the chicken to make the coating stick to it well (and it did). Delicious, and the liquid was great on the basmati rice that accompanied.

Eggplant with Garlic Sauce

I had zucchini, not eggplant, so I sauted it (took 10 minutes for each of two batches), using maybe about 2/3 as much oil. I skipped the simmering step, and when adding the cornstarch-soy-sugar mixture, gradually added maybe 1/2 cup water. (I also completely omitted the red pepper, but that's because toddlers were eating it -- ordinarily I wouldn't -- and oyster sauce, because I didn't have any.) To my mind, it was even better than with eggplant. But both ways are delish.

Cheddar Rice Casserole

I paid attention to earlier reviews, saying it was too eggy and bland, and made these changes: * 2 eggs instead of 4 * 4 tsp Worcestershire instead of 2 * 1/8-1/4 cup parsley instead of 1 cup (!) * brown rice instead of white * added 1 cup chopped broccoli * added 1/4 cup chicken gravy. It was delicious; everyone loved it. I know you can't expect to have gravy on hand all the time, but I suspect adding cooked chicken or chicken stock, which we didn't have, would have done for us.

Vegetarian Korma

Finally, a version of korma we loved! Took all the hotness out (we have toddlers), and added 1 tsp garam masala. We used butternut squash instead of potatoes. Lovely.

Thanksgiving Leftover Wontons with Cranberry Salsa

I brought these to my monthly ladies night. The ladies were hesitant to try it since it sounds so weird, but after they did, they couldn't stop eating them. One lady even suggested to her sister that this is what they should have for Thanksgiving dinner. I made recipe pretty much as is. 1/2 the recipe for the Cranberry Salsa seemed to be more than enough.

Apple Pork Chops

I used applesauce instead of apples, and got a good flavor. ...I did have the problem that the amount of liquid (3/4 cup!) was far too much. So I poured it out and reduced it and put it back at the end. Next time I think I will just use less liquid.
