Ground Beef Stroganoff

Hey, it's quick, cheap and easy. And on top of that, it's yummy! An excellent weeknight meal. I imagine this would freeze really well too. So you could make it up, and freeze half, then you have it for another night when you don't want to cook!

Baked Potato Soup

This was such a good soup! I made it on a whim last night, and its definitely a keeper. I upped the potatoes to 4, and the broth to 4 cups. We're garlic nuts here too, so I chopped up four garlic cloves into the sautéed onions. So the flour went up by another tablespoon or so. (I kind of just grabbed a handful of flour and tossed) Also, for toppings, to make it more 'baked potato like' I had sour cream, and green onion, along with the cheese and onion. Big hit around here, and one Ive been told I need to bring to the next potluck family meal. Five stars!

Easy One-Step Spaghetti

So simple! But so easy! A great "Oops I didn't make dinner" meal that doesn't result in fast food. 5 stars for simplicity - add to it what you'd like to make up different tastes. Me? A Jalepeno, ground beef, an onion, and chicken stock to make the flavour go further. But this would totally work as is!

Beer Rolls

These turned out perfectly! And it was my first time using my bread machine to make dough, so I wasn't sure if I was doing anything wrong. I used MGD, for that's all I had. I can see where this would have been better with a darker beer. But since we were going for more of a plain roll, it was perfect. I melted the butter with a clove of chopped garlic and spread on top of rolls before baking, then sprinkled rosemary and sea salt when they were done. Delicious!

Outrageous Chocolate Chip Cookies

These were very good! I made as is, aside from swapping out the white sugar for brown. Im going to consider them 'healthy' for the oats and the peanut butter. I imagine they could be made moreso with some wheat germ and ground flax or something. Delicious cookies!

Banana Crumb Muffins

These were really delicious! I've made them twice now. Once as the recipe stated. And they were perfect. Moist, with that beautiful crumble on top. Perfect as is. But I wanted to tinker with it to make it a bit more healthy, since its January, and we're on that health kick, as you do. *wink* So.. the second time around, I made it with Flax oil instead of Butter. And coconut oil in the crumble in place of the butter. The flax oil gave it a slightly nutty flavour, and the coconut oil made the crumble quite nice! Definitely a keeper of a recipe.
