Carrot Cake II

Simply delicious! I loved this recipe, and so did everyone else! Even my husband who does not usually eat low-fat foods. I tried the regular version of carrot cake, and this may even be BETTER than the regular, more calorie version. :-) I am glad I found a low-fat recipe, without compromising the taste. (I did add frosting, tho it would have been dee-lish even without it)

Low-Fat Blueberry Bran Muffins

This was good, though it had too many blueberries for my liking. Next time I will substitute walnuts or pecans for the blueberries. Good tasting, healthy snack.

Irish Coffee

This drink was way too strong. My mom and husband thought the same thing. Next time I will try leaving out the whiskey and just adding Irish cream, which still has alcohol.

Apricot Pork Chops

This was really yummy. I made some modifications, using 2 pork chops: 1/3 cup apricot and pineapple preserves; 3 oz tomato sauce; and 1 tbsp onion powder. After I mixed and poured the sauce on the pork chops, I added one dollop of the apricot and pineapple preserves on top of the pork chops. It turned out delicious - both my husband and I loved it. This recipe is going in my recipe book!

Spanish Flan

Absolutely delicious! I didn't change a thing on the recipe. I made two flans for about 20 people and everyone loved it. This is going to be my main flan recipe from now on. I have tried many other recipes, from Cuban cookbooks and web sites, but this one tops them all. I used dark cake pans because it was all I had on hand and it came out PERFECT. Just remember that the sugar takes a long, long time to melt, especially if you don't have a powerful stove. Try this recipe -- you'll love it!

Golden Rum Cake

Deeee-licious. I made this for a party and everyone loved it. Many people had seconds. The only change I made was to include only a splash of rum in the glaze. I used appleton rum in both the batter and the glaze. I made the cake two days before the party and stored it in the fridge in a cake tupperware. I already put this recipe in my recipe book.

Pan Fried Tuna Patty

yum. i doubled the recipe, used onions instead of celery, and used ground spices. when i was forming the patties, the mixture was runny. i squeezed the patty, trying to figure out how much liquid to squeeze out and how much to leave in so the patty wouldn't break apart. it involves some trial and error, but overall, all the patties came out pretty well formed and with good flavor. since i'm eating lower carb, i served the tuna patty on top of a spring mix salad. i would definitely make this again.

Delicious Pumpkin Bread

Delicious!!! Changes I made and still yummy: Used half white whole wheat flour and half oat flour. Used half canola oil and half applesauce. Used 2 cups of sugar instead of 3. Doubled the spices. Used two cans of pumpkin 14 or 15 oz. I'll definitely make this again. Actually, I've made it once before. Scrumptious every time. I got the recipe bookmarked. UPDATE: I used this recipe to make banana bread. I changed the servings to 12 and used 1 3/4 cup of mashed bananas instead of the pumpkin. Used 3/4 cup of sugar. Doubled the spices. And made the other switches I mentioned above in my previous review. SO DELICIOUS!!!!
