Whole Wheat Honey Bread

Reviewed: May 17, 2014
This recipe is excellent. The only changes that I have made is to use 2 Tablespoons each of honey and molassas instead of all honey. I also use butter instead of shortening but will soon try using applesauce instead. This makes a very tasty loaf of whole wheat bread.

Amish Oatmeal Cookies

Reviewed: Apr. 24, 2008
These are very good cookies. I used cranraisins instead of raisins and did not grind them. To make life easier instead of using a pastry blender to cut in the shortening I put 4 cups of the flour into the food processor and gave it a couple of flicks and it was all cut in perfectly and quickly. I did not use the egg wash either. Cookies were good and will use the recipe again simply because it makes a big batch of good cookies.

Raisin Bran Chewies Cookies

Reviewed: Feb. 6, 2007
These cookies are wonderful. If you bake them just a little longer they are nice and crispy. I like them that way. My husband likes them a little chewy so I end up baking them both ways. Just love everything about them. I added nuts this time. Next time I will at a few chopped dates. Thanks for the great recipe.

Applesauce Bars

Reviewed: Jan. 17, 2007
I had several pints of homemade apple butter I did not want to go to waste. I made a double recipe following the recipe except using 2 Cups of apple butter instead of applesauce. I eliminated the spices since the apple butter was highly seasoned. Added a handful of cranraisins. Baked for 45 minutes at 350 degrees. Bars were thick and very, very good. Will do it again with no hesitation.

Cuban Beans and Rice

Reviewed: Jan. 8, 2005
After reading the reviews on this recipe I made a few alterations which made a very enjoyable dish. I added thyme and bay leaves while cooking the rice. I added the beans during the last 20 minutes of cooking and they held their shape extremely good while soaking up the juices. I also, used a little more liquid than called for. I added the spicy sausage at the end and all turned out super. I will serve a bottle of hot sauce with dinner so everyone's tastebuds will be satisfied. I did not actually time the cooking time of the rice I just checked it every so often and finished using my own time schedule. Thanks for the recipe.

Streusel Apple Coffeecake

Reviewed: Dec. 26, 2004
This recipe is a 5 Star. I made it in a tube pan, bundt pan just too small. Just a couple of suggestions. First, next time I will finely dice the apples and mix into the batter and then proceed to use the steusel in layers as directed I used a combination of lowfat sourcream, yogurt and applesauce. Excellent results. Flavor of the coffeecake is also enhanced by lemon or orange zest. For appearance I made a thin frosting and drizzled on the top. Not to much, just for effect. Once you make this recipe you will keep it near by to repeat and repeat. Thanks Kris!

Veggie Burgers

Reviewed: Nov. 16, 2004
This recipe is super. I did not change any ingredients. It took one minute to process ALL vegetables, onion and cheese in food processor. I sauted the vegetables in iron skillet for added vitamins. I sauted until the vegetables were free of any liquid. The reviews are right only 1/3 Cup of flour was necessary for dipping patties in after forming them. I pressed them in a hamburg press for uniformity. Because I knew that I would use a George Forman grill I added about 1/2 teaspoon of liquid smoke to mixture. They were just the best veggie burgers that I have ever made. I am anxious to substitute brocolli for some of the squash. I hope you enjoy your burger as much as we have.

Zucchini Apple Pie

Reviewed: Oct. 17, 2004
This pie is superb. Bought an excess of 6-inch zucchini. Didn't peel them just sliced them and made the recipe just as stated. It was so good I will buy zucchini in the winter just to make the pie. Probably will add a few raisins as we really like them. SUPER recipe. Thanks a lot for sharing
