Soft Oatmeal Cookies

These are delicious frozen. I know it sounds weird but they make an excellent frozen treat (plus they last longer... not that you'll need them to). I made them once the normal way (Yum!). And once using splenda for the white sugar and apple sauce for half the butter (guiltless yum!). This is a great recipe!

This was AMAZING! I cut the recipe down to third and only used a whole red onion to cut the onion portion. It still made plenty! I will be making this again!

Cranberry Apple Muffins

HEALTHIER VERSION: For the flour I used: 1 cup whole wear flour, 1 cup white flour and 2 packets of plain instant oatmeal. For the sugar I used: 2/3 cup splenda no calorie sweetener and 2/3 cup brown sugar. I replaced the oil with 1/2 cup apple sauce. I didn't have coriander so I used 1 tsp nutmeg and 1 tsp cloves. (I also didn't have cranberries so I used a 1/2 cup raisins (soaked in hot water for 10 mins to plump) and 1/2 cup chopped dates. Baked at 350 for 20 mins and they are PERFECT! YUMMY! The right amount of sweet.

Pumpkin Pancakes

DELICIOUS! I followed the recipe except I exchanged BUTTERMILK for the "sour milk" the recipe was asking for (Sour milk combines vinegar and milk). I made the batter the NIGHT BEFORE and simply pulled it out of the fridge the next morning and scooped it out. The batter was thick, but the pancakes were still mighty fine! :D

These are delicious doing the recipe exactly! These cookies are not meant to be brown so don't over cook them (like I did) waiting for them to brown a little... Even with my slight mistake they were still yummy!!!

Chili Relleno Casserole

This was EASY and DELICIOUS! I used roasted peppers from the market which I deseeded. My boyfriend said he would prefer a chili relleno with more of a carb base (rather than an egg base). I will probably layer it with some home made tortillas next time.

I completed this recipe as is (except I mashed the bananas) and it was AMAZING! I'm a first time baker at a high altitude so if I didn't screw this up everyone else should be good to go! :D
