About this Cook
Just a guy that loves to cook and eat delicious well prepared food. Oh, and I have a thang for coffee. So, just a guy that loves to cook and eat delicious well prepared food, and that has a thang for coffee...and... well, almost anything sweet.... and... baked.... So... basically, you know, I uh, like food...and can be a little silly at times (my head was put in the oven several times as a child and it got a little baked). Got a problem with that?...Excellent! Now go bake me a cake!! ;0)
My favorite things to cook
Breakfast foods like french toast, pancakes,omelets, soft scrambled eggs, southern gravy and biscuits (on occasion!). I also enjoy making candy every year during the holidays, taking up my mom's tradition. Since I was raised in the south, I also love to barbecue and smoke meat. Hard to believe, but I also enjoy vegetarian cooking and tofu...nothing like marinated fried tofu!
My favorite family cooking traditions
I try and carry on my mothers tradition of cooking candy and Christmas treats for friends and family as mentioned. They include divinity, pecan pralines, fudge, haystacks, and cookies with lots of big nuts!
My cooking triumphs
Making gravy on my own like my mom taught me...that was a good one!
My cooking tragedies
My Pralines not turning out the right consistency...more than once! Happens every year... Haha

Heavenly Halibut
I was only making it for me so I halved the recipe and it turned out great! Delicious and easy. My side dishes were a baked (microwaved) potato with skin on - cut in half and then mashed with fork and then drizzled with butter and spices. Browned on both sides in a hot iron skillet starting with potato skin side down 1st so the butter and spices soak in, then brown and flip to brown and crisp the "soft" side of potato (if desired). Sprinkle with grated cheese and broil to melt cheese...and then a side of steamed broccoli.

Yowza! A quick tasty crispy home-made potato chip from the microwave - who would have known? Excellent!

Sweet Cornbread Cake
Yowza damndoozle! This is good cornbread cake! Delicious. I halved the recipe as I was only cooking for two. And it turns out, I only had 1 egg so I added a little more butter and oil. I used a small 6" (?) iron skillet for baking using a little oil to coat and after pouring in the batter I heated up the skillet a tad on the burner before putting in the oven for 35 minutes.... I can't wait to have some with butter and honey and strong coffee with heavy cream in the morning. Yum! You gotta try this if you like a sweeter cornbread.
