Pumpkin Pancakes

These pancakes made the whole house smell wonderful, but the batter was a bit heavy. I thinned it out and had a wonderful breakfast. Remember to oil your pan, as they are low in fat and tended to stick to my nonstick griddle.

Mexican Rice II

Yes, this is authentic. I've been making spanish rice for more than 20 years and this is how it is done. I would only suggest that you cut the liquid down to 1 3/4 cup if you are using tomato sauce. Also, for a once skillet dinner, you can arrange chicken pieces, or diced pork chops over rice after you add the liquid. Do not open the pan until 20 minutes have passed. Serve with fresh or refried beans and hot tortillas. mmmmmm.....

Navy Bean Soup I

I made this for the teen group at church. The theme was "Living Simply so that others can Simply live". After tasting this, I'm not sure it fits the theme, it so SO GOOD! I tripled the recipe, and used canned chicken broth. I also added carrots for color and used rotel tomatoes. Instead of ham (which would get pricy) I used some turkey sausage I had on hand. It was great! Just a hint that my dear grandmother gave me: Don't cook the beans in the same liquid you soak them in and you will gut down on the gassy side effect of bean soups...

Peanut Butter Cookies IV

I followed this recipe exactly and also got a crumbly dough. Into my Kitchenaid mixer bowl I added milk in a drizzle until dough formed a ball. Then I rolled in raw sugar for the first tray. They were good. The following trays I did not roll in sugar and they were perfect!

Easy Pancakes

This was good. I referenced my buttermilk pancake recipe and found that it calls for 2 tsp baking powder for 2 cups flour. I used 2 tsp (not tbls), a dash of cinnamon and 1 tsp vanilla and these turned out well, if a little dense. I would use this again.

Sugar Free Cake

i made this cake twice. The taste was good both times, (but you really have to like raisins). The first time it came out a bit dense. The second time I made it I added a tsp of baking powder and let it sit about 5 minutes before I put it in the oven. That seems to make it a little lighter. Overall a good cake for someone who is limiting sugar intake. I also used half whole wheat flour. I might cut back on the splenda next time. with all the raisins, it is plenty sweet.

Upside-Down Coffee Cake

I used apples, otherwise followed recipe exactly. I thought the cake was a bit dense, but my hubby loved it! Maybe if I used a lighter oil instead of solid fat, it could lighten up the cake a bit.

Great weeknight meal. No leftovers tonight. I used chicken broth instread of water, and added some frozen peas. Next time, I'll try some shredded carrots, or julianned celery.

Cinnamon Apple Pancakes

I didn't have any whole wheat flour, so I made them with unbleached. They were very good. Next time I'll use brown sugar instead of honey, and add more cinnamon and maybe some vanilla. Very good way to use up some extra apples!

Tender Potato Biscuits

great! i always have leftover potatoes when we order from the local chicken place. this was a great way to use them up. these were soft, almost like a roll. good flavor. my only mistake was that i made them with my largest biscuit cutter. with these, smaller would be better as they are too soft to hold their shape.

I used thighs (because that's what I had). This was a good easy recipe to make with stuff you probably already have. I'm just sorry I only had 4 thighs. My son was the only one who got seconds..

Cheese Garlic Biscuits II

definately double up on baking powder! I used buttermilk and they were PERFECT! Crispy outside, soft and tender inside. I also froze my butter for about 10 minutes then grated it into flour mixture and tossed everything together. Wonderful!

Wow!!! Excellent! teh only change I make is theat I used buttermilk instead of sour cream, and added about 1 tsp cinnamon. Wonderful thanksgiving day breakfast.

Chewy Sugar Cookies

I wanted a drop sugar cookie to send on a high school weekend trip. These are tasty with a good chewy texture, but have the flavor of a store-bought or bakery cookie. I used butter flavor shortening, and rolled in cinnamon sugar. I might make again, but next time will roll in a crushed corn flakes, or a mixture of that and coconut. I made a 2nd batch using 2 1/2 C flour & 1/2 C cocoa, rolled tops in chopped nuts, and bottoms in sugar. Followed same directions, came out great!!!

Simple White Cake

Chocolate Waffle Cookies

I followed the recipe exactly and got 13. Maybe it was my waffle iron, (deep pockets, belgian) but they were a bit cakey. They were good, but not great. Next time I'll add some chopped nuts, or mini choc chips. Some cinnamon might help also.

Angel Biscuits II

These look like canned biscuits out of the oven, but have the texture of a sourdough bicuit. I made the whole recipe, but only baked a few on the first day. The rest I froze on a cookie sheet till firm, then stored in the deep freeze in a freezer bag. Later in the week, I took them out and let them rise, it took about an hour and a half. They were fine, just like the first day, and a lot less work. I may make this a regular.

I was expecting the crispy light buneulos I was raised on. these were soft and a bit bland, more like a sopapilla. Not a bad recipe, but not a bunuelo.

Quick and Easy Chicken

i should have read the reviews BEFORE i started. i was short on sauce, too, but my family liked it. my teenage sons said it was like teriaky-ish barbeque. i'll definately do this again!
