Ginger Glazed Mahi Mahi
Delicious. I use Gluten-Free soy sauce (Tamari) and where it says to marinade the fish with skin side down, I actually marinade it with the meat side down. That way the marinade soaks into the fish. My husband I love ginger so I increased the amount (2 tsp).

Mid-Eastern Chicken Thighs
My husband and I really enjoyed this recipe. I rated it only 4 as we made some changes (these changes made it a 5 for us) - I added Crimini Mushrooms along with the onions. I also used more spice than what was called for. After the chicken was cooked through I removed the chicken/mushrooms/onion from the liquid and put them in a dish in the oven on really low to keep them warm. I then turned up the heat on the liquid in the pan to cook it down to a nice thick sauce to pour over the chicken mixture. Next time I might try adding a little corn starch to thicken the sauce quicker. To make the meal gluten-free I added low sodium/gluten-free/free-range chicken broth. Asparagus goes well with this meal as well as a nice fresh salad.

Bacon Wrapped Pork Medallions
I am not overly fond of pork chops or pork loin but I really liked this. My husband loved it - therefore I am giving it 5 stars. I omitted the seasoned salt as many recommended, but did add some onion powder. I used Garlic infused Olive Oil with half the amount of butter called out. I used Ghee (clarified butter) which has such a wonderful taste. I also added some sun-dried tomatoes and sliced half an avocado and cooked with with the pork in the oven. Served with with Asparagus and fresh sliced tomatoes completed this delicious meal.
