Baked Chicken

Amazing. Simple and easy but so so good! I left out the last step of drizzling melted butter over the breast and they were still moist and delicious. My boyfriend went back for seconds! I served with yellow saffron rice and steamed vegetables. We loved this. I will definitely be making this again. Thanks for the recipe. :)

Vegetarian Stuffed Bell Peppers

Ok i am giving this 5 stars even though i changed a couple of things. Normally i do not rate/review on someone's recipe if i change it, but today i am! I made these last night and they were delicious! Everyone loved them, i'm only sad today because there are no leftovers! I did add a pound of ground turkey to my mixture to make it go further plus i was cooking for 4 men who love meat! I also used a hot salsa in place of the tomato. The only thing i would do next time is maybe punch a few holes in the peppers to allow the juice to drain, i had to tip them all upside down once cooked. That being said the stuffing mixture was wonderfully moist and delicious! Great recipe! Can't wait to cook this again!

Tuna Pita Melts

I didn't rate 5 stars because i made mine a bit different... To make it less fattening i did not use mayo, instead once i toasted the pita for the first 5 minutes, pulled it out and spread a layer of Atheno's red pepper hummus over the pita, then topped it with plain tuna, which i diced dill pickles in and placed sliced tomato on the tuna then topped with cheese and put back in the oven for another 5 minutes. ABSOLUTELY delicious! Quick and easy, great for lunch!

Chicken Marsala

I made this last night for my boyfriend and I. Without even having his first bite my boyfriend said, it was the best looking plate i ever sat in front of him. It was delicious! I followed the recipe as stated. So simple. Quick. Easy cleanup. So good. Definitely going to be a regular for us. Thanks for sharing!

Penne with Chicken and Asparagus

FANTASTIC! I made this last night for a couple of friends. It was a big hit. I used whole wheat penne. I used double the amount the garlic. Perfect. Leaves you feeling satisfied and not eck as some creamy pasta dishes do. Very flavorful if seasoned correctly. I did add mushrooms and sauteed them with the asparagus. I can't wait to eat leftovers for lunch today! Thanks for sharing! YUM!

Spicy Chipotle Turkey Burgers

WOW! Amazing! I saw made these last night. My boyfriend grilled them for us and i served on toasted buns with red leaf lettuce, tomato, and sliced avocado, i also made a chipotle mayo by combining light mayo with the adobo sauce from the chipotle chilies. Fantastic burger, we like spicy food so i added 3 chipotle chiles. I made a broccoli slaw and sweet potato fries as sides. Definitely a regular in my dinner rotation.

Spicy Garlic Lime Chicken

Delicious!! Easy, i used too think of chicken breast and ended up butterflying them so i added a little extra seasoning. Also, i used two fresh squeezed limes. (I LOVE LIME!) Definitely a keeper!

Chicken and Gnocchi Soup

WOW!!!!!!!!! Seriously good soup!!!! I made this last night for dinner, perfect for a rainy fall evening!! My boyfriend had 2 and a half bowls!!! He said he can't wait for me to make it again! I did everything as directed, minus the cornstarch mixture (it was plenty thick without it) for my chicken i grilled 6 boneless, skinless tenders and chopped them up. It was delicious!!! Definitely making this a regular!! Thank you for sharing!

Salsa Chicken

I made this last night. It was delish! The only thing i would suggest is to be sure your chicken breast are not too thick. I used pretty thick breast and it was not as flavorful as it could have been, but overall it was very tasty and it will definitely be a staple in my home! Thanks for sharing :)

Stuffed Peppers

These were good. I did them a little differently, i used lean ground turkey and brown rice. The mixture was only enough for about 5 medium size bell peppers. I felt like they needed more seasoning, i browned the meat with fresh chopped onions, minced garlic, salt and pepper and some ground cayenne pepper. Still felt this was missing something so i will play around with the recipe, great base to start with.

Slow Cooker Cilantro Lime Chicken

This was SO good!! I made it for a small dinner party at my apt and everyone RAVED about it!! I used a whole jar of Herdez Salsa Verde, along with the cilantro and lime and made my own taco seasoning with cumin, garlic and other spices. Once i shredded the chicken with a fork (which was very easy) i poured some of the leftover juice from the chicken, over the shredded chicken. Everything was delicious!! Thanks for sharing this recipe!

Pork Chop Dinner for Two

This meal was delicious and so easy to prepare, i was a little worried about the veggies drying out so i added about a cup of chicken broth to the dish before baking, it turned out so moist and delicious! I made it for my boyfriend and he absolutely loved it! Clean plate club all around :)
