DASH Diet Mexican Bake
I must have been the only one with this problem, but after 45 minutes at 400 degrees the cheese on top of this was burned almost to the point of being inedible. The flavor was what we were looking for - I think the next time we try making it I'll cook the chicken ahead of time and severely reduce the overall cooking time. Other than that, it definitely has the potential to be a great dish, and the problem may be nothing more than a quirk in my own oven.

Cowboy Mashed Potatoes
These potatoes are fantastic! I was kind of uncertain at first too, especially about what mashing would do to the carrots and corn, but it was fine. I cut the baby carrots in thirds before boiling and that seemed ideal, since the chunks were big enough for flavor and texture but not too big. We did break down and top with sour cream for some flavor since we're cutting out a lot of salt, but even the bites without sour cream were tasty! Excellent recipe.

Baked Pork Chops I
I made this recipe exactly as-is and it was AMAZING. The pork chops were so tender that the knives we thought we'd need went unused. My husband, who made uncertain faces at first and said he didn't think he liked sauces that involved wine, raved about it as soon as he dipped a finger in the finished product for a taste. Made my own garlic mashed potatoes and roasted broccoli to go with it... both of which also tasted great when they got into the sauce!
