Garlicky Baked Butternut Squash

My family loved this. I had problems peeling the squash but it was worth it as it tasted wonderful. The only thing I had to do different was to use dried parsley.

Grandma's Chicken Noodle Soup

Very good. I used only 1 tsp of salt and that was more than enough with regular chicken broth. I did not have cornstarch so I used potato flakes instead and just sprinkled them on the boiling soup. I also added a cup of carrots and a tsp of garlic. The family loved it.

Southern as You Can Get Collard Greens

I have never had collard greens before. These were wonderful. I used a ham bone instead of ham hocks. And then I cooked them for about 1 1/2 half hours. The flavor was very rich and tasted great.

Bananas Foster II

This was outstanding. I used 2 tsp of rum extract and 3 tsp of water as a substitute for the rum. I also used 4 banana's. It was gone in a flash and they were licking their bowls. Thank you.

Artichoke Chicken

I loved this. But I love artichokes. I browned the chicken first then placed on top of some fresh spinach. I used the marinated artichokes and followed the rest of the recipe. So good. Thank you.

Non Dairy Chocolate Cake

This was fantastic. The best cake ever. I made it for my SIL birthday as he has a dairy allergy. I doubled the cocoa, used almond extract instead of vanilla, and used 1/2 cup water and 1/2 cup almond milk. It baked in 35 minutes in a 9 inch round pan lined with parchment and the sides greased and floured. It came out perfectly. I left it covered in the fridge over night and frosted it in the morning with Pillsbury's chocolate frosting as that is dairy free then topped it with raspberries. It was loved by all and already has become a request for other birthdays. Thank you for such a lucious recipe.

Vegan Chocolate Cake

Christmas Brunch Casserole

This was good and would have been better if I had actually watched it so it did not brown so much. It would be less cooking time for me next time. But it was tasty. I made it as written and had no problems with it being dry. Also I did not let it sit overnight but just threw it in the oven. It turned out fine. I also used 8 eggs instead of the 4.

Macaroon Kiss Cookies

I got this recipe from a co-worker last year and they have become one of our favorites. My daughter who doesn't care for coconut loves these. The almond flavor is so good with the coconut. Made exactly as written except I did have to bake longer. Must be my oven.

Seafood Dip

Very good and easy. I used 8 ounces of cream cheese so it was not dry at all. Had to watch it closely though as it did not take as long to bake. It was the only thing at the party that disappeared. I have made this 4 times in the last 2 weeks and each time I get many requests for the recipe and it disappears completely.

Best Steak Marinade in Existence

I made this as written only to find out that it was enough for many steaks. I put some in a container and froze it for another time. It is tasty. I kept flipping it over in the plastic bag to make sure that it coated all of the sides of the meat.

Chicken Zucchini Casserole

Made this as directed and felt that it was pretty good. No pop out flavors but was eaten by everyone in the family. I used Stove top chicken stuffing. Next time I will add some other spices to help boost up the flavor.

Chicken Pot Pie VI

This was great. I used chicken that I had already prepared that I keep in the freezer. Had to use swiss cheese as I had no mozzerella. Plus i skipped the mushrooms as my family doesn't like them. But the flavor was wonderful. Will definitely make again.

Caribbean Sweet Potato Salad

This was a nice change from the mayo based potato salad. Nice flavors that everyone enjoyed. Will make again. I made as written. Next time though I will cook my potatoes less than they say as they did get a bit mushy. I just need to watch them closer.

Creamy Crab and Pasta Salad

This was definitely better the next day. The day I made it I did not care for it. There was too much lemon flavor. But not to be wasteful I saved it and the next day it was wonderful. I did add some fresh snap peas to it for more crunch. I could not use the peppers due to allergies. I would make again but only if it has a day to sit. I also added some celery because I did not use the peppers. This has now become one of our favorite pasta salads using the changes I named.

Mushroom Pork Chops

This is comfort food at its best. I made exactly as written using fat free cream of mushroom soup mixed with a bit of skim milk. It was delicious. I sliced my onions instead of chopping as that works better for me. I will make this again and again. Had to use golden mushroom this time and it was even better. Sprinkled on some seasoned salt and spicy pepper blend before browning in a bit of olive oil. Thinned the soup with some water and then made as directed. Yum.
