This is very good. I will probably put a little less soy sauce in it next time because it was a little salty for my tastes, but I will definitely make it again! I do love all Thai food!

Karen's Cranberry Apple Sweet Potato Packet

This was very good! I made it in a 9x13 pan and just stirred everything together in the pan. I cooked it on my oven's convection setting, and it was done in 30 minutes. I am wondering if it would have needed to be cooked longer on a regular cook setting. Either way, it is quite good and we will be having this again!

Pumpkin Corn Bread

These are really good. To make it a little heathier, I used half wheat flour and I also used applesauce instead of canola oil. I made these to go with chili and it was the perfect pairing. I will make these again and again!

Parmesan Crusted Baby Carrots

These are delicious! Instead of dirtying two pans to make them, I just drained the carrots after cooking them, put them back on the burner, and added the butter in and let it melt. Then I stirred them for a little while. Then I added the cheese and followed the directions there. I also used baby carrots rather than cutting up carrots. Definitely a keeper!!

This is very good! The only change I made to the recipe was to use twice as many mushrooms because we like them. I might even use more next time...or use more of a variety of veggies. This is definitely a keeper recipe!

Sweet Potato Potato Salad

This is WONDERFUL!!! I will make this over and over again. I love the combination of sweet potato and regular potato. I've used several different kinds of non sweet potatoes in making it. They're all good!

Zesty Slow Cooker Chicken Barbecue

This is really delicious and easy! After I had put everything into the crockpot, I came back an hour later and found that my crockpot was broken. I just transferred everything to my stock pot, and I cooked it on low on the stove for the rest of the time. It was perfect and delicious!

Pesto Turkey Burgers

These were delicious! I will definitely make them again. The one change I will make is to the seasoned salt. They were just too salty for me with the pesto, feta cheese, and 1.5 teaspoons of seasoned salt. I will either cut the seasoned salt out or only add about 1/4 of a teaspoon. Thanks for the recipe though! It's a keeper!

This recipe is good and easy. I think next time I would cook it longer in the slow cooker. It was much better heated up the next day. The flavors melded together better. I would give it 3.5 stars.

Grilled Peanut Chicken

Oh my goodness!! I cannot say enough good things about this recipe. The peanut sauce is DELICIOUS!! I did make a double batch to use during the grilling process, and then I made a batch of sauce for eating. As some other reviewers suggested, I added a bit of brown sugar to the dipping sauce, but I don't think it was necessary. Some suggested that the sauce was too thick, but I really liked that consistence of it. I will probably make a double batch dipping sauce next time too. It reminded me of a pad thai sauce. Soooo good!! Thank you for this recipe. We will definitely be making it again!

Tortilla Espanola

This turned out to be quite flavorful, but I wasn't able to prepare it the way the instructions said. I thought that the amounts seemed a little off: 4 potatoes and one onion seemed like a lot for 5 eggs. It was certainly too much for my nonstick pans. So, once I cooked the potatoes and onions and combined them with the eggs, I put it in the oven on 350 for 20 minutes. It turned out really good! I will probably use only 1/2 an onion the next time I make this, but that may be more of a personal preference.
