Elena's Yellow Rice

This is our new favorite way to prepare rice! It's so easy and flavorful! I prepared this recipe with a few changes: 1. I used brown rice instead of white, so I cooked it for 45 minutes; 2. I used champagne vinegar (because that's all I had on hand) instead of apple cider vinegar; 3. I didn't add the peas/carrots.

Butter Lamb Gravy

This was a hit tonight! I did stray from the original recipe though. Here are my changes: I used chicken instead of lamb; canola oil instead of butter; 3/4 to 1 tsp. turmeric, ground ginger (since i didn't have fresh ginger to grate), and minced garlic; NSA tomato sauce instead of tomato paste; 1% milk instead of the creme fraiche; and completely forgot about the honey! After all those changes the recipe still turned out fantastic! When I have all the ingredients I would love to try this recipe again (especially with lamb!) as I am sure it is even more delicious! As it turned out, though, I will definitely make it again with my changes!

Best Brownies

These were good. I whipped these up after dinner the other night when my husband was having a sweet craving (men!). They were easy to make, requiring ingredients I had on hand (yay!). I didn't make the frosting though because my husband didn't want to wait that long! They were good without it!

Favorite Popcorn Balls

This was okay. I halved the recipe (because I only had 1 C of molasses). Like other reviewers stated, there wasn't enough sauce for all of the popcorn. It only covered about half of it. The flavor was pretty good... not exciting though. Oh, and there was no way I could turn the bowl of popcorn into balls... there just wasn't enough sauce to make them stick together.

Michael's Foccacia Bread

Excellent, easy recipe. This was my first time making bread of any kind. I made this Foccacia bread to go with our meal of Spaghetti and Meatballs. It was perfect. Everyone raved over it and my husband has requested that I make it at least once per month for sandwiches. Next time I might knead some of the fresh rosemary into the dough... it kept falling off the top of the bread when it was being eaten. Thank you for this recipe!

Six Can Chicken Tortilla Soup

Fantastic! I added some oregano and cumin; used frozen corn instead of canned; Great Northern Beans (all I had on hand) instead of Black Beans; and used the meat from a whole chicken (with which I was making stock) instead of canned chicken. It was delicious! My husband (who ordinarily doesn't like soup) couldn't get enough. He's been telling everyone about this amazing chicken tortilla soup that I made! One suggestion, chop fresh cilantro and green onion to sprinkle on top of each bowl of soup. Yum!

Trinidad Stewed Chicken

We make this recipe at 3-4 times per month. Everyone in our house LOVES it. I've prepared it using boneless skinless chicken breasts; chicken thighs (boneless once; bone-in another); and as written with the whole chicken (minus skin). It is good every time! It's even better the next day, if there is any leftover! Thanks for a great recipe!

This was pretty good. Needed something though... not sure what. It kind of lacked flavor. I was hoping for a really flavorful dish. With some tweaks it may be good. I'll try some other recipes before I try to rewrite this one though. It is definitely worth trying, as some people will probably love it as is!

Black Pepper Goat Curry

**Caution** Recipe AS IS is very, very spicy! This recipe had a good flavor, but the spiciness was just too much even after I reduced the amount of Cayenne Pepper to 1.5 Tbsp. and the Salt to only 1.5 tsp. And instead of fresh Curry Leaves I used 1 Tbsp. Curry Powder. I will probably make this recipe again with even less Cayenne Pepper. I'm sure it would be even better with lamb! Yum!

Egg and Cheese Puffs

These were a little too "heavy," according to my husband. I made them for him to have something quick to grab for breakfast. He's not used to eating so much fat (bacon) and butter. They tasted pretty good, but kind of greasy. And they stuck to the paper muffin cup liners... so next time I would use just the aluminum foil liners, perhaps sprayed with non-stick cooking spray.

Shrimp, Clams, and Scallops Pasta

I only had scallops to use in this dish, but it was fantastic! I will definitely make this again. I garnished with grated mozzarella cheese and parsley flakes (for presentation). I will submit a photo.
