Carrot Cake III

I cut this recipe in half because I only wanted a small cake. The center did sink but I think it's because the pan I used might've been a little too big for it. I also used walnuts instead of pecans because I had those on hand. I added a bit more cinnamon than required and a smidgen of nutmeg. The cake + frosting came out really great! It was my first time making it and my husband and I loved it! Will definitely make again.

S'mores Crumb Bars

These turned out sooooo well! VERY DELICIOUS!!! My husband loves marshmallows so he was a HUGE fan!! I was taking some over to a friend's place and he was trying to stop me! Good thing I have the recipe and can make them for him again anytime! These are so yummy!

Party Pinwheels

I made this for a games night at a friend's house and it got great reviews. I did read reviewers' comments about only using half the package of ranch mix but I completely forgot when I was making it. I did think it was too salty but no one else complained, so that was good. I didn't add the black olives because my husband and I aren't big on them. But overall, they were good.. I just have to remember to cut down on the ranch mix or double the other ingredients.

Garlic Mashed Potatoes Secret Recipe

The only change I made was to roast the garlic in the oven at 350 degrees for 15 or so minutes before putting it in the potatoes. Goodness, this is my default Mashed Potatoes Recipe for life!

Butterscotch Oatmeal

I didn't use the egg because I was making such a small portion.. this was really sweet so I cut down on the sugar but wow, this was soooo good! I can't have oatmeal any other way!!

Ten Minute Enchilada Sauce

This was great! I just used regular flour instead of the self-rising, no biggie. I poured this on top of the "Spinach Enchiladas" on this website and wow, did this dish disappear fast!!

Spinach Enchiladas

a-m-a-z-i-n-g! I followed other reviewers and added green chiles and seasoning to the spinach and it was delicious! I used flour tortillas instead of corn because the stores didn't have them in stock. Instead of the canned sauce, I made the "Ten Minute Enchilada Sauce" on this website and when it came together, EVERYONE'S TASTEBUDS WERE HAVING A FIESTA!!

Baklava

This was a hit for Mother's day! There were absolutely no leftovers! Everyone asked me how I made them. The only different I did to the recipe was using Puff Pastry instead of Phyllo Dough, only for the reason that no grocery store around me had any! I had my husband roll the dough to make it thinner and made layers from that. I didn't even use half of the butter called for, probably used 1/4. It was time consuming but the end result was GREAT! :)

Sweet Restaurant Slaw

I made this recipe with a few changes. According to other reviewers, it was too sweet so I used 1/3 cup of sugar. I also cut the vegetable oil to 2-1/2 tablespoons instead of 3. I didn't add the poppy seeds and the only vinegar I had was white wine vinegar, so I used that. I didn't have much time to let it settle in the fridge for 2 hours so I put it in the freezer for about 30 minutes or so.. it seems to speed that process up a bit and it tasted pretty good. I'm not normally a fan of coleslaw but I think I'm starting to like it!

Artichoke & Spinach Dip Restaurant Style

The first time I made this, I followed the recipe exact and it was really good.. my family loved it. I don't add the artichoke because my family isn't a fan of them and I use Bertolli Pasta Sauce, it tastes great. The second time I made it, I actually completely forgot to put the cream cheese in.. and no one (even myself) noticed. It was still really good, it disappeared so fast!

Jamie's Cranberry Spinach Salad

I made this for a lunch yesterday. I didn't want to add the poppy seeds since so many reviewers said it wasn't necessary. However, I did toast the almonds AND the sesame seeds. The salad dressing smelled too vinegar-y it was a turn-off at first and I was worried no one would like it. But I mixed it in with the salad anyway and it wasn't so bad. The ladies at the lunch complimented on the salad - they really liked it! :) The host emptied my salad bowl and kept the rest (which wasn't much anyway). Overall, this was great.

Butternut Squash Soup

This turned out really well. I was surprised. I didn't have a blender to use at the moment nor a food processor, so I used a stand mixer. It wasn't as smooth as I would have liked but it was still delicious!

Grandmother's Buttermilk Cornbread

I'm not a big cornbread fan but wanted to try this because it seemed good enough from the reviews. I followed the recipe exact and with the max amount of time it recommended, I put a toothpick in to check and it came out clean. However, when I took it out and it sat - I found the center to be undone. It wasn't until it started to cool down that I noticed it. So I put it back in for another 10 minutes because it already cooled down. When done, it was fully cooked and semi-moist. My husband's family liked it but I'm still not a fan.

Candied Sweet Potatoes

This was super sweet but SUPER GOOD!! It was beautiful when the marshmallows plumped up in the oven but when I took it out the marshmallows slowly went down and didn't look the best to present. That's the only thing I didn't like but the taste... AMAZING :)
