Shortbread Cookies II

I tried this recipe in my new cookie press because it sounded simple.The cookies were great.I did replace half the sugar with brown sugar splenda.I think this must have gave them more flavor,because they sure were flavorable and perfect texture.Be sure to use real butter and to cook till just lightly browned on edges.Time depends on your cookie size.

Italian Bread Baked on a Pizza Stone

Here is a tip that I use when baking on a stone.I let bread rise on a piece of parchment paper on a cookie sheet,then just slide paper and bread onto stone and bake.It is so easy.

Homestyle Potato Chips

I remember having these at home growing up.I just want to add,be sure to blot-dry the potatoe slices to prevent oil splattering.We skipped the salt soak.The important thing is cold soak to rid of excess starch.

Asian Coleslaw

Good.I found that replacing vegetable oil with toasted sesame oil is more flavorful.I took egg roll wrapers and cut into strips and fried till crispy and puffed.Sprinkle on top of each serving.

Bacon Mushroom Chicken

I make this with boneless chicken breast,season with salt free seasoning and use reg.bacon.I also omit butter and add some cheese on top for the last few minutes.It is a good low carb recipe.It is better if you brown chicken first also.

I have made this several times for my grandsons birthday. I usually make it 3-4 layers and use different colors of Jello for each,we call it a rainbow cake.

Asparagus Soup in Seconds

I had some fresh asparagus so I chopped that and cooked it in the broth.Then put in the food processor to smooth.Put back in pot and added 1/2 cup cream.It was very good and low carb.

Baked Sweet Potato Sticks

These are great,only I use cajan seasoning and I also cut them into sticks. I put everything in a zip lock bag and rub around to coat evenly.

Dad's Breakfast Bread

This is like a recipe that I have been making for over 40 yrs. and my mother and grandmother before that.Only I use 1-2TBS. sugar and eggs are opt.After forming flat disc. of dough,cover and let rest 10 min.and fry.Great with soup,stew and beans or sprinkle with cinn. sugar.We just call fried bread.

Winter Squash Rolls

Moist,light,tasty and a wonderful golden color if you use butternut squash.I baked at 375 degrees for 30 min.They tend to over brown at 400 degrees.I got two large pans(32 rolls)with this recipe.

Key Lime Cake II

This cake is easy,pretty,moist and tasty.I used vanilla sugar free instant pudding and a few drops of lemon oil.I used a bundt pan and it was done after 35 min.I will try with lemon juice next time.

Spicy Chicken Breasts

This is excellent on chicken and pork.I noticed some reviewers had family members that didn't like theirs so hot.Mix up spice without cayenne and divide into 2 shakers,then add cayenne to each ( 1 1/2 teas. to one and less to other)Shake on at grill.

Tuscan Soup

Wonderful soup! I used a roll of low fat sausage,added 2 diced carrots,1 can of mushrooms & 2 cloves of garlic. I used 4 cans of broth.I also used a tall can of evaporated milk with 1Tbs. of cornstarch whisked in. And a handful of Italian 4 cheese.Serve with homemade croutons and a sprinkle of parmesan.

Whole Wheat Zucchini Herb Bread

I made this with my big mixer.It is a good bread,but next time I will use rosemary and thyme instead of basil.Cheese could be added also.I doubled the recipe and it made two nice round loaves .

Chocolate-Zucchini Cupcakes

These are very good and moist even though I used 1/2cup applesauce for half of the oil.I also replaced the nuts with some mini choc. chips and toffee bits.They don't even need frostening this way.

Fresh Southern Peach Cobbler

My 11 year old grandson and I made this tonite and it was very good topped with vanilla ice cream while still warm from oven.You need to put 4-5 tsp. of cornstarch in filling to get just right.Good and easy recipe!

I made this with my grandson today.It is good,but I was a little disapointed with the texture.I thought it would be more moist,but it has a good choc. flavor and the frosting is good although very sweet.
