Amusement Park Cornbread

Reviewed: Oct. 10, 2003
Delish, moist, and fluffy! I've made several cornbread scratch recipes and this one is my favorite of them all. Popped right out of the iron skillet. Very fluffy and crumbles great. This is "company" quality!

German Chocolate Cake III

Reviewed: Jul. 31, 2003
Professionally MOIST! Heirloom recipe. I thought that the spread would get thicker but discovered that it was fine and soaked in a little. I accidentally dropped an extra tablespoon of vanilla into the spread and it was still yummy (phew). I tripled the chocolate and shortning at the end to get all the way around the cake. I pre-measured out all the ingredients and it went fast and was fun even with 4 little interrupters. I JUST NEED A WHITE CAKE THIS MOIST.

Husband's Delight

Reviewed: Mar. 17, 2003
The kids and I thought this was great. They picked out the onions because they were crisp as they weren't carmelized first...a feature I especially liked with it's fresh onion taste. My husband like it but to my surprise it was a bit hum-drum for him and thought it needed something to punch up the flavor. Leftovers were dry and not very good.

Portuguese Pork with Red Peppers

Reviewed: Mar. 17, 2003
I didn't have anything but red wine and used it instead and the dish was INCREDIBLE! The pepper is very spicy so the next time I will not only use the right kind of wine for the proper taste, but, I will cut back on the black pepper for the 4 little eatters at my table......moist...very, very, moist! A real meat stretcher dish too with leftovers for lunch!

Creamed Onions II

Reviewed: Mar. 17, 2003
Easy and tasty. My onions were too big though they were labeled boiling onions....I really should have bought super tiny onions. A nice warm-the-tummy side dish to go along side your colorful veggies because it is blah-zay white. Perhaps a sprinkling of parsley or something ....

Beef and Barley Soup III

I do not know why I didn't think of this before for my left over roast! A great way to get the kids to eat it! A must have for your recipe box.

Simple White Cake

Reviewed: Mar. 17, 2003
I needed a quick recipe immediately for St. Patick's day....I followed the recipe, dropped in some green food coloring and made cupcakes instant presto. Though there was almost not enough batter for 12 cupcakes they were light and soft and lightly sweet. Still moist the next day. Not eggy tasting. They stayed nice and green inside too! I think I'll try a cake with swirls of food colors.....a little fancy for a slap-it-together kind of recipe!

Slow Cooker Baked Beans

Reviewed: Feb. 11, 2003
I read all of the reviews first and went with using one 16oz package of beans. I boiled for a while and probably went over 10 mins and let them sit a little over an hour. I just took my time about it. I started the crockpot at 12:30 on High and the beans were perfect by 4:30. Right amount of sauce too and never added more water. I still stayed casual and finished the recipe with the final steps and ingreds and went another hour on low for fear I've over cook them. These are professonal, afordable, and gormet-looking and tasting! This recipe is what your teen boys will brag to their future wives about! No can will ever compare. These are a wow! I will memorize this one!

Baked Mushroom Rice

Reviewed: Jan. 18, 2003
Wonderful. I put in chopped leftover steak and had it for a main dish and then a side dish later. Even the kids loved it and getting them to appreciate rice isn't easy!

Borscht I

Reviewed: Jan. 18, 2003
This was my first taste of borscht and I loved it. It was work but very good and even better freezing lunch portions. Told the kids it was vampire soup and they ate their veggies! At first I forgot the dill and it was great then too.

Beef Stew VI

Reviewed: Jan. 18, 2003
This was great. I love to make meals that are cooking while I clean up the kitchen before we eat. This was very tasty and not at all bland. We did season each serving with some kosher salt. I had to add a lot of water because it was evaporating too fast and it'll didn't dilute in flavor. Very good...even great.

Stuffed Peppers

Reviewed: Jan. 18, 2003
Mixture filled up four large green peppers (with a little extra rice) and I used another entire can of sauce over the top...we like it saucy around here. I tossed on a can of mushrooms since my son won't eat the green pepper....easy and delicious.....It took about 20 more mins to cook to 160 degrees.

Jim's Apple Waffles

Reviewed: Jan. 18, 2003
Wonderful and special. A little heavy so it doesn't take many to fill up on and so delicious! If I wanted somebody to remember me for my waffles, this is the recipe to do it. Sweet but not too much so....liked it better with with a drizzle of light corn syrup than the maple syrup (of course, butter). Next time, I will separate the eggs and whip up the whites separately and fold them in at the end to see if they would be more airy and lighter.

Egg Salad II

Reviewed: Jan. 12, 2003
Warm and good! Not at all what egg salad usually is but what else would you call it? Hmmm. I agree that it's a party dish that goes with hot wings....perfect for that. I liked Tobasco on it. It is salty...a big reason why the 4 kids loved it! I made for lunch with bread and crackers. Next time I will use homemade bread crumbs because my commercial stuff had a lot of sodium and go easy on the salt and switch to garlic powder. Great for using up Easter eggs! Could easily increase egg count. The celery gave a nice needed crunch. Be good on party toasts.
