Pumpkin Pancakes

I made these as written, but the consistency of the cooked pancakes was mushy. No one in my family would eat them. The flavor was good, though.

Fruity Frozen PHILLY Cheesecake

This was yummy and light, I used light cool whip and 1/3 less fat cream cheese. Next time I will omit the raspberries from the filling and put fresh raspberries on top as a garnish instead. The raspberries in the filling were super hard and not easy or enjoyable to eat! I will definitely make this again, it is super easy and the family really liked it. They did like the peanut butter version on this site better, but this was my fav.

Frozen Peanut Butter Cheesecake

I made it in a springform pan which made serving a breeze, but when it came out it looked so tiny. Next time I will double the filling since it was gone in a flash anyway. I served it with some store bought hot fudge sauce and chopped peanuts, like the picture shows. It got gave reviews, thanks!

Indian Relish

I served it over a block of cream cheese with crackers. Everyone raved about it and asked for the recipe. It is very similar to putting pepper jelly over cream cheese, which is much easier. BTW I followed the recipe (except with 3/4 C of sugar) and no one thought that it was spicy at all. The cream cheese probably helped there.

Chicken with Chipotle

This took way longer to cook than the recipe stated. I must have had some big legged chickens! I was somewhat put off by the amount off grease in the pan after cooking the chicken. Also, them big legs took up alot of room in the pan but didn't seem to have much meat when we were eating them, which was a bit tricky with that giant saucy leg on the plate! If I make this again it will have to be with chicken breasts or maybe some boneless skinless thighs. I thought that the sauce was delicious, but way too spicy for my little ones.

Lori's Spicy Chipotle Lasagna

This was perfect for entertaining! I made it ahead, enjoyed my dinner party and totally impressed my guests. We weren't sure what kind of salad to serve it with...we ended up doing a mexican style salad, but italian would have been better. The only change that I made was using shredded mozz instead of fresh. OH, and gluten free noodles which worked just fine, we couldn't even tell the difference in this recipe. It is alot of work, but I will make it again for sure. Amazing lasagne!

Tortellini Soup

I loved this...the kids liked it too, probably would have liked it more with less spinach. I used a 10 oz package of frozen chopped spinach and it did seem to take over. I added a sauteed onion and 1/2 pound of gound italian sausage. I did not have vegetable broth so I used chicken. OH, and no need to cook the tortellini in a seperate pot, just drop them in your soup towards the end! It was really fabulous.

Hearty Ham Casserole

I added a can of Rotel tomatoes and green chiles to the "adult's half" of the casserole and everyone was happy. Great use for leftover ham.

Shepherd's Pie VI custom version

This is the first time I have made shepherd's pie and the recipe is a definite keeper. I made it easier by browning the meat in a dutch oven and then layering the other ingredients on top. Less dishes to do :) I also used premade refrigerated mashed potatoes to cut down on time - microwaved them as directed and the dish only needed about 10 - 15 minutes in the oven. Thanks!

Lime Chicken Soft Tacos

Even my husband liked this and he considers chicken to be a "vegetable"! I only changed three things: yellow onion instead of green b/c that is what I had, per another reviewer I used beer instead on vinegar, and I added some chili powder. This was a wonderful meal for what I had on hand. Thanks!

Easy Cheesy Skillet Chicken

My 3 year old twins, 6 year old and 8 year old kids all loved this. So did my husband who eats like a toddler! Thank you Thank you Thank you. I added seasoned salt to the chicken breasts, used 4 oz velveeta in place of the american slices, and served it over egg noodles. Fabulous family friendly meal :)

Tiramisu Layer Cake

I made this a day ahead as suggested by other reviewers...we didn't eat it until 8:oo the next evening and it was a wilted, soggy mess. The flavor was OK, but so many people were put off by the appearance/coffee flavor, only half was eaten.

Tater Tot Bake

Quick, easy and kid friendly. Used ground buffalo, lowfat low sodium soup and used an ovenproof skillet. Once the meat was browned, I added the rest of the ingredients and popped the pan in the oven. Next time I will add some veggies. Thanks!

Cabbage Fat-Burning Soup

I think you have to like cooked cabbage to eat this soup. I was able to eat it for lunch for a couple of days, but on the third day when I opened the bowl the smell of the cabbage was diet plan enough. No more. I would rather hit the treadmill!
