Rhubarb Cherry Pie

Excellent, simple recipe! I found everything to be well proportioned, maybe a little sweet. Rhubarb gives the cherry a more complex flavor.

Acorn Squash with Apple

Summer Corn Salad

This was delicious. Fresh basil is a must, but everything else can be toyed with. I used frozen corn, cooked and cooled, and inferior tomatoes that I had on hand. I mixed balsamic and white vinegar. Be sure to add salt and pepper to help bring out the taste. I will make this again and again.

Spring Lime Tea Cookies

Yummy and a little different. I used lots of lime zest in the batter. I also made the glaze using powdered sugar, lime juice and corn syrup for shine. I dipped the cookies in this. Will make again!

Family-Style French Toast

Super easy and fast to prepare. My family likes this better than the overnight variety. It's far less soggy. We use toasted regular white bread. You can easily put six slices in a 9x13 pan.

Yummy Bok Choy Salad

Very good salad! I usually add a partial packet of seasoning from a Ramen noodle pack to the dressing. It gives some extra flavor. I also use Napa cabbage instead of bok choy on occasion. Both are good.

Sugar Cookie Icing

Great recipe if you're looking for icing that dries hard. Like others have said it needs more liquids. My tip is to put it into baggies and cut off the tip. Even if you're going to spread it out, it keeps it much cleaner and easier to work with. It also doesn't dry out while you're working with it that way.

Stained Glass Cookies

I just made cookies like (I used my usual cut-out recipe) this and it took till the 5th tray to get them off the pan. I used tin foil covered with nonstick spray. After I had the cookie on the pan, I covered the "opening" with more spray before filling with a whole Jolly Rancher (works better than lifesavers). After baking just till the candy melts, slide the whole sheet of tin foil off the pan and let the cookies cool completely. Turn the cookies upside down and peel off the foil. This is what finally worked for us. The results are beautiful!

Hobo Dinner

I've been making this dish for years, but over the fire in foil packets. This is a great idea for a very simple make-ahead meal. I add a few more seasonings like garlic powder and soy sauce. I also layered it like a lasagna. It takes longer than an hour, maybe 1 hr 20 min. It also is tasty to put velveeta over it all and let it melt in at the end. I also drained the grease at one hour and at the end. A family pleasing dish!

Calico Bean Casserole

Great in the crockpot and as leftovers. I used a mixture of beans and extra beef. I also through in a can of diced tomatoes. Yummy.
