Puerto Rican Pork Roast

Love this recipe! Easy and quick to prepare. The only change I make to it is I slow roast it at 325 degrees for 2.5 to 3 hours. It comes out very thender. Next time I will try the vinegar too the last reviewer suggested. It sounds like a great idea.

Matzoh Ball Soup

Here is how to make this recipe easy, very easy, and tasty: Use chicken broth (preferably organic), use Swanson pre-cooked, cubed chicken in a pouch (perfect chicken and no draining required). I add garlic and a bay leaf for additional flavor. You can also use egg whites to lower the cholesterol count whne making the Matzo Balls. There now its perfect, easy and fast!

Pumpkin Muffins II

Although this recipe was good, it was not a 5 star recipe. It was more like spice cake than pumpkin bread. I tried it once with apple sauce instead or oil. Don't do that. It does not come out moist enough and looks dull. Definitely, do not use 2 tbls of cloves that is way too much. I think chopped nuts would improve this recipe although I have never tried it.

Bananas Foster II

Wow, this could not be easier to make! It is also delicious. I eliminate the walnuts for serveral reasons. First, I do not believe that Banana Foster typically includes walnuts, and secondly we just prefer a smooth texture. I have also made this with brandy as well and then flambe the desert, dramatic! Use dark rum, it adds a little more flavor.

Chicken Marsala

This is a very easy recipe and wonderful. I highly recommend it for people new at cooking that either want to impress a date or your folks. I sometimes use more exotic mushrooms to add a more gourmet flair to it and typically serve it over "No Yolk" egg noodles for a lower cholesterol meal.

Carol's Arroz Con Pollo

This was very nice, but being from Miami, it is not like the Cuban style Arroz con Pollo I am used to. The flavors were milder and I will try in next time without tomatoes. I added just a hint of red pepper to spice it up and to enhance the other flavors in the rice.

Beef Bourguignon II

I have made this twice and it is wonderful! It is very easy to prepare and actually better than the same dish at our local French restaurant. I have seen several comments about adding beef broth to replace some of the time wine. Although, that may not be a bad idea I think it is important what type of red wine you use. This recipe originally in France calls for a dark burgandy wine which cooks away nicely. I love the deep rich flavor and would not advise a Chianti for instance or Zinfindel.
