Dave's Georgia Black Eyed Peas
This was so good! I changed it a little. First I rinsed the peas and boiled them and let them sit an hour. Then I browned a chopped ham steak in a dutch oven. Removed the ham and sautéed the onion with garlic too and butter. Once those were caramelized I added the ham again and the water with only 2 cubes. I then added the drained peas and let it simmer with some salt and pepper. It was ready after 2 hours.

The Best Vegetarian Chili in the World
I've made this several times. It is delicious and even great as a dip for tortilla chips. I like adding some cheese to the top and recommend being careful with the jalapeno peppers. Sometimes the peppers we pick up are not that spicy and other times they are very spicy. We test them before putting them in and only use one if they are very spicy :)

Lasagna Roll Ups
These turned out great and you could put any sauce with them or make them less healthy but just as tasty by switching up the stuffing. A friend of mine used italian sausage instead of tofu and alfredo sauce instead of marinara. I froze the ones I made and took them out one at a time to bake for an easy, no prep dinner.
