Creamy Pepper Jack Cheese Soup

I thought this sounded good and had some pepper jack cheese on hand. Read the reviews, figuring other reviewers might not have made a roux-based soup before and did something weird to make the "texture off" like many had said it was. I have made plenty of soups this way, cheesy ones too, so I figured it would be fairly simple and turn out tasty. Everything went fine until I added the pepper jack at the end. It WOULD NOT incorporate into the soup, even though I left the heat on and stirred and stirred it. I have NO IDEA why that would be - I have made similar recipes without this happening, like a pepper jack cheese sauce to go on macaroni and cheese. Ultimately, I do not recommend this recipe. The finished product had gooey balls of cheese floating in it. Not sure if this is the "weird texture" others talked about, but that's what I thought was wrong with it. Sorry!

Bran Flax Muffins

My grandma made these a lot during my childhood. I always felt like I was doing something good for myself when I ate one. Now that I’m grown up, I like to make them too, but with my own twist – I always chop the raisins up so they’re spread throughout the muffin more, and use pecan chips instead of mixed nuts. To eat, I slice them in half, warm them in the toaster oven, and finally, finish them with a smudge of cream cheese. Don’t let the name these muffins, or all the healthy ingredients in them, scare you away – if you didn’t see the recipe, you’d never know they had oat bran or flax in them, or that they’re low in fat and full of fiber. Bottom line? They rock! I highly recommend.

Simple Savory Pork Roast

I made this in the crock pot instead of the oven, and used fresh minced garlic in place of the garlic salt. Doubled the amount of spices and shook half of them with the pork, the other half with some carrots, potatoes, onions and green beans. It was great, even without any added salt. The combination of herbs gave this a great flavor - will make again!

Honey Mustard Grilled Chicken

This was awesome! Way better than I expected. I'm not a huge fan of Dijon mustard, so I used a little less than half yellow mustard, the rest Dijon, for the mustard that's called for. I think the Dijon in there made it more "robust" tasting than if I'd have used all yellow mustard, but was still subtle enough that I liked it. We will make this again FOR SURE.

Campbell's® Golden Chicken with Noodles

I really like this. The sauce reminds me of a warm pasta salad type dressing - others complain it's too thin, but I don't feel it should be any thicker because it has a very strong, tangy flavor. A thin/light coating is just right flavor-wise. I always make this using 2 chicken breast halves instead of 8, and fresh minced garlic instead of garlic powder. Then before we eat it I shred the chicken all up so it kind of becomes part of the sauce. Finally, I serve it with whole wheat rotini pasta instead of egg noodles. Oh, and - fresh parsley on this is a must! It really completes the recipe. I've forgotten it a few times, and it's definitely missed.

Incredibly Cheesy Turkey Meatloaf

WOW! I don't normally buy ground turkey. But, someone gave some to us for free, so I set out to look for a recipe that I could put it in. I was expecting this to be just okay. I absolutely, positively underestimated it. Delicious! I used sharp cheddar cheese and a good splash of worcestershire sauce, then topped it with bbq sauce. Made half the recipe and my boyfriend and I ate the whole thing it was so yummy. On a final note - like other reviewers mentioned, you can't really tell it's turkey instead of hamburger, which I like.

Easy Baked Tilapia

This is great! I don't put any butter on it, use fresh broccoli, carrots, and red bell pepper for the veggies (don't like cauliflower), and finally, put fresh minced garlic over the whole thing instead of garlic salt. Lastly, I put salt and pepper on the whole thing. I usually serve this dish with Zatarain's Red Beans and Rice - really healthy and low-cal meal, and so delicious you'd never guess it! I totally recommend!

Sloppy Joe Sandwiches

I used fresh onion and garlic instead of powdered, but this recipe was just what I thought sloppy joe filling should taste like. Excellent. Will definitely make again.

Heavenly Chocolate Mousse

Though I've ate mousse several times, this was my first attempt at making it myself. I did as other reviewers suggested and substituted cold coffee for the water. All-in-all, the recipe was as good as I had hoped it would be, and my guests all liked it! A note on the egg mixture you have to cook on the stove - when it got up to 160 degrees, it turned from a runny liquid to a very frothy texture. I'm guessing that's what you should look for if you don't have a thermometer.

Chicken Broccoli Shells

I thought this was an excellent recipe. I made homemade Alfredo sauce - the store bought stuff tastes weird to me (definitely not like the real thing). I took other reviewers advice to pour extra sauce over the top of the casserole also, and I'm very glad I did, because otherwise the shells would be too dry in my opinion. One final thing - if making your own Alfredo sauce, you may not want to thicken it as much as you would if putting it on fettuccine, etc. It thickens up A LOT once you bake the shells.

Electric Lemonade

A tasty and pretty drink! I didn't put 12 ounces of lemon-lime soda in when I made these though - I just "topped off" each glass (with probably more like 4-5 ounces in each). I garnished with a slice of lemon and a raspberry. Made for an awesome-looking presentation!

Quick and Easy Chicken Noodle Soup

I have made this recipe several times. It's a keeper for sure! The only thing I do differently is add some fresh minced garlic to the saute mixture. I also tend to add more veggies than this recipe calls for.
