About this Cook
I love to bake just about anything. We have been married since 1965 and have lived in Oklahoma City since 1966. We have 2 grown sons, one wonderful daughter-in-law and six absolutely wonderful grandchildren. Each son has 3 children (and we have a soon to be ex-daughter-in-law who I still love dearly). My favorite thing to make is a dessert of any kind and love collecting old recipes.
My favorite things to cook
Desserts and anything sweet and chocolatey.
My favorite family cooking traditions
Thanksgiving and Christmas with the entire family - doesn't happen often but I still cherish those times and good memories.
My cooking triumphs
Desserts of just about any kind. I absolutely love making cookies, cupcakes, cakes, cheesecakes, bars, cobblers, pies and prefer to make them from scratch but am not entirely opposed to using some cake mixes, etc. as part of the recipe.
My cooking tragedies
Poppy seed cookies - just awful. Homemade bread years ago - but I have gotten a little better. Learning the hard way that you need to chill a cheesecake until firm and very cold before serving.

Sopapilla Cheesecake
Wonderful and so easy to make - even a novice will do well with this one. I like to use the vanilla bean paste in place of the extract - gives you some nice fine "bean" appearance to your filling. I wonder if anyone has ever added a fruit (apple) filling on top of the cream cheese layer to make it seem like an apple cheesecake recipe? If so, how did it turn out and did you bake a little longer to account for the filling?
