Eggplant Croquettes

Excellent recipe. I added some chopped portabello mushrooms. I baked the eggplant and then mashed it. I also baked the croquettes as burgers in a greased jelly roll pan. I also sauted the onions, mushrooms and garlic before adding to the mix. They were tasty, held together and came out crispy at the edges and moist and tender in the middle. Jane

Chocolate Surprise Cupcakes

Made according to recipe. The chocolate part was good, but the cream cheese filling was tasteless. Well the cream cheese part of it was tasteless, but the chocolate chips themselves were good. In my opinion the cupcakes were not worth the effort.

Creamy Rice Pudding

This was an adventure. I made the pudding as directed. Used skim milk and honey (a little less than a quarter cup). Cooked it as directed, tempered the egg mixture. However is was still kind of watery. I chalked this up as a failure. I put it in a 300 oven to keep warm 'til dessert time. And lo and behold when I took it out (about 20 min. later) it had set up! It tasted fantastic. Oh, did I mention that I soaked the raisins in spiced rum? That might have helped some :-) I will admit I was flying blind. I've never seen or eaten rice pudding. Only made it 'cuz my SIL was coming over and she loves it. She gave her kudos to this effort.

Sam's Famous Carrot Cake

I made this cake the day before serving. It was moist and tasty. I substituted applesauce for some of the oil and soaked the raisins in bourbon because I was making a cream cheese with brown butter and bourbon frosting from this site. I also added some nutmeg and used half whole wheat flour and half all purpose. It was terrific and everyone loved it.

Cream Cheese Frosting with Brown Butter and Bourbon

Absolutely the best icing ever! Easy to make and seems to make enough to frost two nine inch layers. Was certainly enough for the 8 X 12 cake I made. You won't go wrong with this cream cheese frosting.
