Grandma's Chocolate Zucchini Brownies

Reviewed: Sep. 10, 2011
I made these brownies without changing anything except the topping (I omitted the sugar and just used 1.5c of chocolate chips), and they were perfect! I would consider them more of a cake than a brownie though. They are so delicious (you would never know there was zucchini in these!), we even ate them for breakfast! *I did bake them in a 13x9x2 dish, instead of a jelly roll pan, which probably just made them thicker. It baked at 350 for 30 minutes.

Donut Muffins

Reviewed: Feb. 7, 2013
EXCELLENT!!! Will definitely make these many times over. I followed the recipe exactly and was thrilled with the results. My kids and I ate all of them up in one sitting, and the boys were asking for more. The perfect hint of nutmeg with a soft inside and crunchy outside. The only changes I would make next time is needing more margarine melted for dipping. I did realize though, for those who want it a tad bit healthier (ha!), is that you really don't need margarine to dip it in. The sugar mixture will stick to warm donuts without it.

Best Ever Meat Loaf

Reviewed: Dec. 11, 2012
This was really the best meatloaf and my family agreed! I only made a few minor changes - I substituted 1 cup dry bread crumbs for the bread slices, and added minced garlic to the sauce. It was delicious and moist, even my picky son loved it. Will definitely be making again!

Chocolate-Zucchini Cupcakes

Reviewed: Aug. 23, 2012
These are delicious! Very moist and tasty! I made a few changes. I did not beat the eggs and sugar for 10 minutes since I only have a hand mixer and not that much time! It did not seem to make a difference. Then to the dry ingredients, I added 1/2 cup unsweetened coco powder since I did not have baking chocolate bars.I used 3/4 cup of oil and 1/4 cup applesauce. I also skipped the nuts. I had enough left-over to make a small loaf of cake, yet now I wish I had used the batter to top off the cupcakes. This recipe probably really does only make 24 cupcakes because I found that they do not rise very much, so you can fill almost to the top of muffin pan. I topped the cupcakes with home-made cream cheese frosting and they were perfect! Brought to a family picnic and they were finished off very quickly. Because of the coco, nobody even realized that there was zucchini in these! Will make again!

Layered Peanut Butter Brownies

Reviewed: Aug. 9, 2012
I have now made these twice, and both times were amazing! Both times, I have followed the recipe exactly (except that the first time I used wheat flour instead of all-purpose, and it did not make any difference). I only have 2 notes to add: first, I have found that the pb only needs 30 seconds in microwave to soften enough to spread, and second that I recommend sifting the coco and the powdered sugar that goes into the frosting. It makes little lumps, which isnt bad with the powdered sugar, but not that nice to have a bitter taste of coco! These ones are definitely worth the time and effort, and I will make them many times more!

Mom's Zucchini Bread

Reviewed: Aug. 1, 2012
I've made this twice now and both times have turned out AMAZING! The only thing I changed the first time was that I added an extra cup of zucchini and a cup of mini chocolate chips (and deleted the nuts). The second time, I did not add the cinnamon nor the nuts and added 1 more cup of zucchini, 1 cup of wild blueberries, and 1 cup of white chocolate chips (It made 2 loaves + 4 mini loaves). I am definitely saving this recipe because everyone loves it!

Firefighter's Favorite Chocolate Chip Cookie

Reviewed: Jun. 28, 2012
Excellent! Followed all directions exactly (other than using toffee bits instead of chopping up bars). Came out perfect and delicious. I recommend taking out of oven a minute before it looks completely cooked since they cook while sitting. Soft and chewy!

Swedish Rye Bread

Reviewed: May 25, 2012
Excellent! Delicious with butter and a bowl of soup. I made the dough in my bread machine (had to add about 1/4 cup more water so that it would mix properly). Then divided into 3 loaves and allowed to rise. Baked in oven at 350 for 25 minutes and they are perfect!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Apr. 24, 2012
Some of the best cookies that I've made yet! I halved the recipe but followed all the ingredients almost exactly - subbed 1/2 cup more chocolate chips since I didn't use nuts and added 1/2 tsp salt. I baked at 350 for 10 minutes and they came out perfect! They are not too overpoweringly sweet, which I personally prefer. Will definitely make again!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Oct. 25, 2011
I was looking for an easy yet delicious recipe for cookies and this was perfect! I followed the recipe exactly, except that i substituted shortening for the butter (only because i had none). I used a medium sized icecream scoop and a light cookie sheet and a pizza stone (I did not grease these or line them and the cookies did not stick). I baked for 18 minutes and they came out crispy yet soft in the middle. Will definitely make again! - made 32 cookies

Spicy Refrigerator Dill Pickles

Reviewed: Oct. 21, 2011
I changed these up a little bit. I omitted the red pepper flakes, since my kids don't like spicy food. I cut the pickles into slices for sandwiches. And instead of chopping up the dill, I added about 4 sprigs of dill to each jar. This recipe made me 6 jars of delicious crunchy pickles!

Buttery Rolls

Reviewed: Apr. 8, 2012
I followed this recipe up until it started mixing in my bread machine. After 5 minutes, I checked on it and it was obvious that it needed more flour. I added about 1 cup more of flour, so I'm not sure if I really only added 3 cups earlier or I just did something wrong! I use my bread machine a lot, so it wasn't difficult to get the consistency corrected. After dividing up dough, I allowed it to rise for 30 minutes, and then also brushed melted butter on the top. Once baked (and warm from the oven) these were delicious! Sweet and soft and perfect. Will definitely make these again!

Corn Bread Hamburger Pie

Reviewed: Oct. 11, 2011
My family couldn't say "this is good!" enough! The only thing that I altered was that I did not use salsa and upped the ketchup to 1/2 cup (my kids aren't fond of salsa). Oh, and I added a 1/2 cup shredded cheddar cheese to the cornbread mix. Delicious! Easy to make and will definitely do again!

Banana Apple Bread

Reviewed: Oct. 20, 2011
After reading the reviews for this bread, I was a little skeptical. But, I thought I'd try it, keeping in mind the others alterations. I substituted shortening for the butter (only because I didn't have any). I added the dry ingredients at the same time as the bananas and apples. Then I used 2 bread pans and 6 mini loaf pans (2 x 4 inch). I also sprinkled a mixture of brown sugar and cinnamon on top (just a little). I then baked in a 350 degree oven for 20 minutes (mini loaves) and 45 minutes (for regular size loaves). These turned out moist (yet cooked through) and delicious! My kids asked for second helpings. Will definitely make again!

Mocha Chocolate Chip Banana Muffins

Reviewed: Oct. 10, 2011
I think these are delicious! The only way that I altered them was that I substituted 1/4 cup Ghirardeli's hot coco mocha dry mix instead of the instant coffee. Next time I will add 1/2 cup though, because the coffee flavor did not come through. I, also, used mini chocolate chips and added 1/2 cup to the batter and sprinkled 1/2 cup on top. Other than the lack of coffee flavor (my own fault), these muffins are very yummy and moist! P.S. 3 bananas equaled 2 cups for me, and this recipe made 24 muffins.

Chocolate Banana Cake

Reviewed: Sep. 30, 2011
This is a very, very yummy cake! And so easy! I found it to be light and airy, not real moist, but definitely not dry! I followed the recipe given (not adding anything to the cake itself other than what this calls for). I did make 12 cupcakes and 6 mini loaves, so the baking time was different (15 minutes for the cupcakes and 22 minutes for the loaves). I then drizzled melted white chocolate on the tops once cooled. I, definitely, will make this again!

Grilled Bacon Jalapeno Wraps

Reviewed: Sep. 10, 2011
AMAZING! I changed up the recipe a little (after reading reviews). I used 4 ounces of cream cheese, less than 1/4 c shredded cheddar cheese, a dash of garlic powder, and 1/4 tsp ranch seasoning. I only used 5 jalapenos, and 10 slices of bacon (cut the bacon in 1/2). I then put them on a broiling pan and baked them at 350. It took a long time to cook them (some longer than others depending on the size). A couple of times, I took out of the oven, pulled back the bacon, and realized it needed longer to cook. The bacon never did get real crispy, yet these jalapenos were so delicious! I would definitely make these again! Oh, and I had a little bit of filling left over. So I halved cherry tomatoes, took out the seeds, filled them and baked them at the same time as the jalapenos. DELICIOUS!

Easy Cookies

Reviewed: Mar. 6, 2012
I love this recipe - so easy and yummy! I make a few minor changes. I sub 1/2 cup shortening + 1/2 cup margarine for the 1 cup butter and 2 whole eggs rather than just yolks (helps keep them from flattening). I also do not roll in sugar since I add 1 cup of chocolate chips. This recipe makes 2.5 dozen if you use a medium size icecream scoop. try: carrot cake with white chocolate chips fudge cake with chocolate chips party rainbow cake with mini choc chips choc cake with pb chips

Baked Haddock

Reviewed: Oct. 21, 2011
Delicious! Cooked perfectly. I served with lime juice to give it a little more flavor. The only thing I'd do differently next time is not make up so much crumb mixture since most of it went to waste (you could probably 1/2 it and still have enough).
