Grandma's Chocolate Zucchini Brownies

I made these brownies without changing anything except the topping (I omitted the sugar and just used 1.5c of chocolate chips), and they were perfect! I would consider them more of a cake than a brownie though. They are so delicious (you would never know there was zucchini in these!), we even ate them for breakfast! *I did bake them in a 13x9x2 dish, instead of a jelly roll pan, which probably just made them thicker. It baked at 350 for 30 minutes.

Peanut Butter Kiss Cookies

I don't know what I did wrong, but this was a disaster!!! I'll have to start out saying that the cookies did taste good, and were eaten very quickly! Yet it was not worth the hassle. When I first saw the recipe, I thought "wow, these seem too easy to be true!" I went with another review and tripled the recipe and substituted the white sugar for 1 c white sugar, 1 c brown sugar, and 1 c confectionate sugar. When I started to shape into balls, I realized that the cookies are just dripping with oil (I could actually squeeze them and oil would come out). I started bake them, yet halfway through realized they weren't baking at all, so I had to flatten with a fork. Before I knew what was happening, my house was full of smoke! I was using a cookie sheet without edges and the oil had dripped in the oven. I still had another 2 dozen or so cookies to bake, so I had to use fans throughout my house. The cookies all turned more brown than I would have liked due to baking in so much oil. I ended up spending all morning making these cookies and then having to scrape the bottom of my oven, so for me it wasn't "fast and easy". All the other reviews are great, so I'm assuming I did something wrong! Or it was that I used a store-brand peanut butter which just had a lot more oil in it. But like I said earlier, they did taste good!

Grilled Bacon Jalapeno Wraps

AMAZING! I changed up the recipe a little (after reading reviews). I used 4 ounces of cream cheese, less than 1/4 c shredded cheddar cheese, a dash of garlic powder, and 1/4 tsp ranch seasoning. I only used 5 jalapenos, and 10 slices of bacon (cut the bacon in 1/2). I then put them on a broiling pan and baked them at 350. It took a long time to cook them (some longer than others depending on the size). A couple of times, I took out of the oven, pulled back the bacon, and realized it needed longer to cook. The bacon never did get real crispy, yet these jalapenos were so delicious! I would definitely make these again! Oh, and I had a little bit of filling left over. So I halved cherry tomatoes, took out the seeds, filled them and baked them at the same time as the jalapenos. DELICIOUS!

Master Pizza Dough

This crust turned out ok, but I don't think it's the best to be used with a bread machine. I doubled the recipe (which then made 2 big pizzas). In the beginning, I had to add almost a whole cup of extra flour because it was too wet. Then after the process in the machine, I had to add more flour to be able to roll it out without it being too sticky. I didn't see any other reviews that had this problem, so I'm assuming it's either because the recipe can't be doubled or because I did it in the bread machine. I did bake it at 400 for 25 minutes, but in order to get the dough to cook enough, the topping had to brown more than I would have liked. I still gave this recipe 4 stars though, because the taste of the crust (I did add some garlic powder and dry herbs) is very good and it has a crunchy outside and soft inside. I probably won't use it again though, just because I like to use my bread machine so I'll have to find a better recipe for it.

Chocolate Banana Cake

This is a very, very yummy cake! And so easy! I found it to be light and airy, not real moist, but definitely not dry! I followed the recipe given (not adding anything to the cake itself other than what this calls for). I did make 12 cupcakes and 6 mini loaves, so the baking time was different (15 minutes for the cupcakes and 22 minutes for the loaves). I then drizzled melted white chocolate on the tops once cooled. I, definitely, will make this again!

Chicken in Creamy Sun-Dried Tomato Sauce

Delicious! I was going to an italian-style potluck and wanted to bring something other than the expected ziti. This got many compliments! I didn't have white-wine, so I substitued with 4 oz cream cheese and 1/4 cup italian dressing. And I also did not have the capers. I used a whole box of noodles and 2 cooked half chicken breasts shredded. I mixed it all together, sprinkled the top with parmesan cheese, and baked it in a covered 9x13 dish at 350 for 45 minutes. I will definitely make it again!

Mocha Chocolate Chip Banana Muffins

I think these are delicious! The only way that I altered them was that I substituted 1/4 cup Ghirardeli's hot coco mocha dry mix instead of the instant coffee. Next time I will add 1/2 cup though, because the coffee flavor did not come through. I, also, used mini chocolate chips and added 1/2 cup to the batter and sprinkled 1/2 cup on top. Other than the lack of coffee flavor (my own fault), these muffins are very yummy and moist! P.S. 3 bananas equaled 2 cups for me, and this recipe made 24 muffins.

Corn Bread Hamburger Pie

My family couldn't say "this is good!" enough! The only thing that I altered was that I did not use salsa and upped the ketchup to 1/2 cup (my kids aren't fond of salsa). Oh, and I added a 1/2 cup shredded cheddar cheese to the cornbread mix. Delicious! Easy to make and will definitely do again!

Banana Apple Bread

After reading the reviews for this bread, I was a little skeptical. But, I thought I'd try it, keeping in mind the others alterations. I substituted shortening for the butter (only because I didn't have any). I added the dry ingredients at the same time as the bananas and apples. Then I used 2 bread pans and 6 mini loaf pans (2 x 4 inch). I also sprinkled a mixture of brown sugar and cinnamon on top (just a little). I then baked in a 350 degree oven for 20 minutes (mini loaves) and 45 minutes (for regular size loaves). These turned out moist (yet cooked through) and delicious! My kids asked for second helpings. Will definitely make again!

Baked Haddock

Delicious! Cooked perfectly. I served with lime juice to give it a little more flavor. The only thing I'd do differently next time is not make up so much crumb mixture since most of it went to waste (you could probably 1/2 it and still have enough).

Spicy Refrigerator Dill Pickles

I changed these up a little bit. I omitted the red pepper flakes, since my kids don't like spicy food. I cut the pickles into slices for sandwiches. And instead of chopping up the dill, I added about 4 sprigs of dill to each jar. This recipe made me 6 jars of delicious crunchy pickles!

Baked Chicken Broccoli and Rice

I gave this recipe only 2 stars because if you were to actually follow it, this is what I would rate it. I changed it up a little bit, and still was disappointed. Due to other reviews, I added 1/2 tsp salt (which was still not enough) and topped with a mixture of spicy mustard and honey. I had to bake for 1 hour at 375 for chicken to cook through. The rice was still not completely done, and there was a lot of watery mixture on top. I think that it should have probably been stirred 1/2 way through the cooking time. The chicken wasn't very tender or flavorful, and we found the rice to be bland. If I was to use this recipe again (which I wont!), I would substitute the water for butter and milk, add more salt, and maybe put a topping of stuffing on. Since there was quite a bit of left-overs (no one in the family ate very much), I will be adding salsa, cheese, and corn, to make a mexican casserole. Hopefully, it's better the second time around!

Best Big, Fat, Chewy Chocolate Chip Cookie

I was looking for an easy yet delicious recipe for cookies and this was perfect! I followed the recipe exactly, except that i substituted shortening for the butter (only because i had none). I used a medium sized icecream scoop and a light cookie sheet and a pizza stone (I did not grease these or line them and the cookies did not stick). I baked for 18 minutes and they came out crispy yet soft in the middle. Will definitely make again! - made 32 cookies

EXCELLENT! big hit with my kids! Yummy and fun. I did add 1/2 slice of american cheese to each one, and next time I think I'll use cheddar for more flavor. I baked it on the pizza stone for 10 minutes.

Green Bean Casserole IV

I made this dish as a sub to the original green bean casserole due to mushroom allergies. I gave this 4 stars (rather than 5) not based on taste. This dish tastes amazing! I did make some alterations though. I doubled the recipe. I substituted the onion for french fried onions. And I topped with french fried onions instead of stuffing. The thing I'll do different next time is actually mix it into the green beans. It cooked as a cheesy layer on top and did not sink into the beans and seemed a little too thick (maybe I shouldn't have doubled the flour). Other than the seperate layers, this was a good dish!

Easy Cookies

I love this recipe - so easy and yummy! I make a few minor changes. I sub 1/2 cup shortening + 1/2 cup margarine for the 1 cup butter and 2 whole eggs rather than just yolks (helps keep them from flattening). I also do not roll in sugar since I add 1 cup of chocolate chips. This recipe makes 2.5 dozen if you use a medium size icecream scoop. try: carrot cake with white chocolate chips fudge cake with chocolate chips party rainbow cake with mini choc chips choc cake with pb chips

Buttery Rolls

I followed this recipe up until it started mixing in my bread machine. After 5 minutes, I checked on it and it was obvious that it needed more flour. I added about 1 cup more of flour, so I'm not sure if I really only added 3 cups earlier or I just did something wrong! I use my bread machine a lot, so it wasn't difficult to get the consistency corrected. After dividing up dough, I allowed it to rise for 30 minutes, and then also brushed melted butter on the top. Once baked (and warm from the oven) these were delicious! Sweet and soft and perfect. Will definitely make these again!

Championship Cookies

These cookies turned out yummy, but I did need to change a few things. I followed all the directions up to the point of adding in the oatmeal & candy bars. The dough was very crumbly and to dry to spoon, so I added another egg (maybe my first egg was too small?). Then I added the oatmeal and snickers and (because of other reviews) I also added 1/2 cup chopped peanuts and 1 cup chocolate chips. Also, I used parchment paper which was a necessity due to the caramel sticking. At 350 degrees, these took 12 minutes to cook. They did flatten out quite a bit and are chewy (maybe because of the extra egg?). But they do have great flavor and we all love them. And, yes, it's a wonderful way to use up the Easter candy! :)

Award Winning Soft Chocolate Chip Cookies

Some of the best cookies that I've made yet! I halved the recipe but followed all the ingredients almost exactly - subbed 1/2 cup more chocolate chips since I didn't use nuts and added 1/2 tsp salt. I baked at 350 for 10 minutes and they came out perfect! They are not too overpoweringly sweet, which I personally prefer. Will definitely make again!
