Tiramisu Layer Cake

I've made this several times and I always get requests for more. I've subbed cool whip for the frosting instead of the whipped cream with no problems. Very easy and tastes like you spent hours making it!

Iced Pumpkin Cookies

Very good! To make it healthier I used half whole wheat and half white flour as well as a stick of light butter instead of regular. I subbed brown sugar for half the white. For the glaze I added cinnamon and some maple extract. Well enjoyed!

Jicama, Carrot, and Green Apple Slaw

I also thought this was just ok. I'm not sure it was quite worth the effort - a little bland. I think it is missing something, maybe chopped red onion would liven it up a little?

Creamy Au Gratin Potatoes

Added 3 cloves minced garlic to butter and flour when making sauce (which I think made all the difference). Also, sauteed onions before adding. I doubled the recipe but I didn't double the cheese and it was perfectly fine. I would definitely make again.

Oat Bran Muffins

I've made these several times and they always come out good. I usually substitute wheat flour for at least half of the all-purpose flour. To enhance the flavor I add 1 tsp cinnamon and vanilla. I've also substituted yogurt for the applesauce with good results.

Brazilian Whole Banana Pie

This came out very good. I added coconut for some extra flavor. The only other change I made was to sprinkle the brown sugar on the bottom instead of making a syrup and it still tasted fine.

Tin Roof Sundae Pie

I used the recipe as a base, but changed it around to accommodate what I already had in the kitchen. For the crust, I used Honey Bunches of Oats cereal mixed with a little graham cracker crumbs, crunchy pb, and only 3 tbs corn syrup. Then for the filling I mixed vanilla ice cream with 2 bars of crushed butterfingers. I then sprinkled a little reserved crust and butterfingers on top. It came out great and I got lots of compliments on it.

Maureen's Mocha Cake

This was just ok. The cake had a nice flavor, but was very dry. The frosting was good, but it needed a lot of tweaking to get the flavor/consistency right (I just kept adding a little more of everything until it seemed right). I don't think I'd make this again.

Smoked Salmon and Dill Vegetable Bites

I used fresh dill and about double the amount of salmon. It was delicious! Served spread with sesame crackers which went over very well (in addition to the veggies). Leftovers were great on a bagel the next day.

Soft Christmas Cookies

These were very good sugar cookies - held their shape well and stayed soft. I followed previous suggestions: only 3 1/4 flour, butter instead of margarine, and baked at 350. I frosted with a buttercream frosting. These cookies got rave reviews from all the guests at the bbq I took them to.

Corn Dog Casserole

This is an easy and quick recipe. I make it a little healthier by using veggie dogs and low fat cheese. I don't bother with pan frying anything first - just mix the cornbread and stir everything in. Sometimes I add jalapenos for an extra kick.

Wasabi and Shrimp Cheese Ball

This was very good, based on a few changes I made. I added a lot of wasabi. I also added minced ginger and garlic (about a tsp each). Added a tablespoon or so of sesame oil. There is no way this could be shaped into a ball - I just mixed the sesame seeds in and used as a dip. Went extremely well with sesame sticks.

Chocolate Scotch Whiskey Cake

This cake is absolutely the best! It has a rich chocolate torte-like flavor. I've been told it tastes like it came from a professional bakery. The only thing I do different is that I don't add the raisins.

Peanut Butter Cake II

I really liked the cake part of this recipe. I used a white butter cake mix and added pb chips. The frosting, however, did not turn out as I expected. It tasted way too much like butter - I expected the peanut butter flavor to be really strong and it wasn't. Perhaps using only 1/4 cup butter next time and a little less sugar might help.

Better Than Sex Cake I

Very easy and tasted absolutely delicious. I used a dark chocolate cake mix because the store was out of german chocolate. And I used caramel instead of hot fudge. Brought to work and everyone loved it!

Santa's Favorite Cake

Everyone loved this cake, however I felt it was a bit crumbly when sliced (took away from the beautiful marble effect). I also needed to add a bit of milk to the frosting to get it to a spreadable consistency. Decorated with crushed candy canes on top and whole canes on the sides.
