Baked Chicken on Rice

Reviewed: Jun. 24, 2004
I really liked this recipe. I took some of the other hints (used less milk and drained half the liquid from the mushrooms)and it turned out great. Even my "picky eater" liked it.

German Lasagna

Loved this recipe! The only thing I changed was to use no-boil noodles instead of regular lasagna noodles (as suggested by a previous review).

Onion Pasta

Reviewed: Jul. 10, 2004
I really liked this recipe. I had to half it because I live in a house filled with onion-haters but I made it exactly as it was written and it turned out great. I'll add garlic the next time I make it, just to try something different.

Potato Chips

Reviewed: Jul. 15, 2004
These were pretty darn good although I also had problems with them sticking to the plate and I used LOTS of oil ~ I'll try Pam next time. I had mine with seasoned salt and some with Cajun seasoning. The boys had theirs with salt and they LOVED them!

Garlic Penne Pasta

Reviewed: Jul. 17, 2004
This was pretty good. I used fresh parsley instead of dried because I'm one of those parsley snobs. Next time I'll try it with the tomatoes. The Boy didn't really like it because of the pepper flakes (I like spicy ~ he hates it).

Broiled Pork Chops

Reviewed: Jul. 17, 2004
I don't know what everyone's complaining about with this recipe ~ we LOVED it. The sauce was just the right consistency for basting and I didn't find it too "ketchupy" at all ~ and I HATE ketchup. I will definately be making this one again in the future.

You've Gotta Be Kidding Onions

I made these last night and they were very good. Couldn't be any easier to whip up. I like them as a hamburger topping the best. I also use them on hotdogs ~ yummy! A future staple of my summertime BBQs.

Ahhhhhhhhhhhhhhhhhhhhh......after a long day dealing with 2 teenage boys, this is just what the doctor ordered! It's also good on those "mornings after" for all of us who can't stomach beer remedies.

Honey Baked Chicken II

Reviewed: Jul. 20, 2004
Pretty good. My room mate loved it - made funny mmm-mmm noises the whole time she was eating. It didn't take 75 minutes to cook though; more like 60 and that was more than enough. Can't be too careful with chicken though lol.

Bar Cookies from Cake Mix

Reviewed: Jul. 24, 2004
These were great! I used a chocolate cake mix because I was having a chocolate craving but omitted the chocolate chips because I didn't have any. I used 4 Tbsp. water, as suggested by a previous reveiwer. I normally bake and cook from scratch but lately I've been pressed for time so I've tried mix-based recipes. I wasn't disappointed in the least with this one! The bars were moist and chewy and oh so chocolatey.

Mexican Rice II

Reviewed: Jul. 25, 2004
This is a great side dish! I needed something mellow to compliment my spicier mexican fare and this was it! I didn't have any problem with the amount of liquid added; the rice absorbed every bit of it. I added a bit more chopped onion and also stirred in some cubed cooked chicken (I had extra that needed using up).

Peach Cobbler III

Reviewed: Aug. 2, 2004
I'm giving this a 4-star rating even though my peaches didn't sink to the bottom and it didn't rise properly, because I'm thinking the problem may lie with my baking powder. When baked goods containing baking powder fail to rise, it's usually time to replace your baking powder. That said, the cobbler was delicious! My grandfather licked it right up!

Awesome Broccoli-Cheese Casserole

Yummy! I added a bit more cheese and sprinkled cheese on the top ~ next time I will leave the egg out because I like the sauce consistency without it. Definately a keeper!

Chicken Lasagna with White Sauce

Reviewed: Aug. 7, 2004
I rated this recipe a 4 because of the changes I made to it but it was still delicious.I followed previous reviewers' suggestions and added pepper and onions and garlic which had been sauteed in olive oil to the soup mixture. I also added half a can of sliced mushrooms and reduced the milk to 3/4 c. I used no-boil lasagna noodles and sprinkled some sliced black olives on top just before popping the lasagna into the oven. It was great! Not runny at all. My son wouldn't try it at first because he doesn't like spinach but he did eat a serving of it after watching me wolf mine down. He gave it a 3-star rating. That's impressive coming from a spinach hater! Thanks Holly!

Mexican Mac and Cheese

Reviewed: Aug. 9, 2004
Great recipe Pat! I wanted to use up the salsa and cheese dip I had left over from the weekend so I thought I'd give it a try. It was also one of the easiest dinners I've cooked in quite some time (hot dogs and fries aside). Everyone loved it and my son insists on having it again. Didn't change a thing - the recipe is fine the way it's written.
