Skyline Chili I

I made this on the stove-top instead of in a crockpot. It was AMAZING!!! The only thing I did differently was to add a bit less water ~ I just poured it in until I got the consistency I was looking for. I wouldn't dream of leaving out the allspice or the cinnamon: they make this dish. All the boys gave it 5 stars too! Thanks for the great recipe Holly.

Ultimate Maple Snickerdoodles

Overall not a bad cookie (the kids gobbled them right up) but I was disappointed with the lack of maple flavor. I decreased the cinnamon and added a bit of maple extract (about a teaspoon) but they still weren't all that "mapley". Good cookies though! Thanks Linda.

Baked French Fries I

I normally read the reviews before I try a recipe but I didn't bother this time and now I'm wishing I had. My fries were charred after 30 minutes (45 minutes at 450 degrees is way too long at too high of heat ~ I should have known better; I've been cooking for a long time now ~my bad) and seasoning salt would have been a welcome addition. I thought the mixture of spices would be flavorful enough but a bit of salt is definately needed here. I'm going to try them again though (with the modifications).

Cajun Spiced Chicken

This chicken TASTED great but appearance-wise it could use a little help. It didn't brown up in the oven and the coating still had a very "floury" look to it. I will be making it again but I think I'll either drizzle it with olive oil before baking in the oven, or just fry it in oil or butter on the stove. I like the fact that the dish is so easy and quick to prepare but it needs a bit of tweaking.

Cornmeal Cookies I

Fantastic cookies Eve!I'd never even heard of these before but after reading the reviews, I had to try them. Both the taste and texture are great. I'll be making these quite often I think. :-) I didn't add raisins (I have quite an aversion to them). I didn't roll the dough out and cut it. Instead, I formed the dough into balls and flattened with a fork dipped in sugar. Chilling is a necessity, as this dough is quite soft. It's all that yummy butter!

Ham and Cheese Salad

This is great as a salad or a sandwich filling. If I'm using it as a salad, I don't put the ham mixture in the food processor - I simply chop the ingredients the old fashioned way. I like it a little chunkier. I also add about 1/4 c. diced onion and a dash of freshly ground pepper. I love this wrapped in lettuce leaves. Thanks Barrett!

Spicy Chicken Breasts

Great rub Barbara! I halved the cayenne pepper but I think next time I'll use the whole tbsp. This is a great way to flavor chicken without adding lots of fat. Can't wait to try it on pork and veggies.

Taco Seasoning I

While this doesn't taste exactly like the packaged stuff, I'm not complaining! I used it to make my Taco Meatballs (not from this site) and I actually enjoyed them more with this seasoning as opposed to the packaged stuff. Beware though: If you don't enjoy spicy food, you may want to cut back on the pepper flakes and cayenne! I love spicy stuff so it's perfect for me. Thanks Bill!

Breakfast Casserole I

Great recipe Linda! I used sausage instead of bacon and I only used 10 eggs. I wouldn't dream of making this without the broccoli ~ it makes the casserole! Yummy.

Cheesy Fried Potatoes

After reading the reviews, I played with the recipe a little. I used 3 slices of bacon, 3 potatoes, and 4 eggs. I also added the salt and pepper along with some onion powder and garlic powder to the potaotes while I cooked them. It was a hit for Sunday breakfast. The Boy requests it quite a bit. Beef or Chicken Marinade

Easiest Peanut Butter Fudge

Poutine

We even have Poutine available at Burger King here in Nova Scotia. Its great comfort food. However, I haven't ever had it made with cheddar cheese; we use mozzarella cheese or cheese curds and we always use chicken gravy. I'm thinking that the beef gravy and cheddar cheese variation is pretty good too though. Yum! :-)

Baked Egg Casserole

I had this for supper tonight and it was great. I think I'll take a hint from Dreginek though, and next time, I'll skip the oven-baking part. I'll mix in the (shredded) cheese after the sauce has thickened, followed by the eggs, and then serve over toast. Thanks for the post Katherine.

Marinated Baked Pork Chops

Easy, quick, and tasty. The Boy loves 'em. I found the sauce just sweet enough and my chops weren't dry at all. I think using bone-in chops is the key in recipes like this. Thanks Kim.

Cinnamon Pastries

No Crust Pumpkin Pie

Great pie recipe Bea! I made it in a 9" square pan, because, for some odd reason, I couldn't locate any of my pie plates. Very tasty and quick and easy to throw together.
